VEGAN PANCAKES
1 I/3 cup flour (unbleached).
3 Teaspoons.
½ teaspoon salt.
3 tablespoons sugar.
1 egg (egg replacer).
1 ¼ cup milk (Soya milk).
3 tablespoons oil.
¼ teaspoon vanilla .
SWEDISH MEATBALLS
1 tablespoon olive oil
1 onion, chopped
1 large celery stalk, chopped
2 garlic cloves, minced
3 teaspoons kosher salt
1 teaspoon ground allspice
3/4 teaspoon ground nutmeg
2 eggs
1/2 cup milk
1 cup dry bread crumbs
2 pounds meat-loaf mix (1 pound lean ground beef, 1/2 pound ground pork, 1/2 pound ground veal or lamb)
1 tablespoon olive oil
1/4 cup all-purpose flour
1 teaspoon sugar
black pepper
1 3/4 cups light cream
1 cup water
Heat oven to 350° F. In a medium skillet, over medium heat, heat the oil with the onion, celery, and garlic, and cook until the vegetables are tender but not browned, about 10 minutes. Add 2 teaspoons salt, allspice, and nutmeg. Remove from heat.
In a large bowl, whisk the eggs, then blend in the milk and breadcrumbs. Add the meat and cooked vegetables and stir or work with your hands to combine. Shape into 1-inch balls. Sauté over medium-high heat, in tablespoon olive oil, a few meatballs at a time, removing them when well browned on all sides. Pour off all but 2 tablespoons of the fat. Whisk in flour, 1-teaspoon salt, sugar, and a few grind of black pepper.
Cook over medium heat, scraping up any browned bits. Whisk in light cream and water. Bring to a boil, stirring constantly, until the sauce thickens, at least 1 minute. Return the meatballs to the skillet and simmer over low heat for 20 minutes.
8 servings.
Beef And Potato Cakes
You can use ground meat if desired. A treat for children.
8 oz. Beef.
8 oz. Potatoes.
1 small 2-3 inch onion chopped finely.
1 egg yolk.
Dark soy sauce.
1 teaspoon salt.
Cook the potatoes and mash. Mix in egg yolk and salt. Chop onion finely, brown with 1 tablespoon oil, add ground meat. Brown for 4 minutes. Add soy sauce and mix the batch with the potatoes.
Shape into balls the size of golf balls, flatten into cakes. Heat the cooking pan. Grease lightly with oil; use medium heat to brown the cakes, turn to brown both sides. If you have an electric skillet set temperature at 340. When automatic control light blinks, turn cakes over.
SERVES: 4-6
LIGHTSIDE
Driving to work on the freeway I looked to the right and seen a lady with her face up to her rear mirror putting on her lipstick. We were going 70 miles an hour, and when I looked again she was moving into my lane still putting on her lipstick.
It scared me, so I dropped my shaver, which knocked my bun out of my other hand. Trying to straighten my car with my knees it knocked my earphone from my head, which fell into my coffee that I had between my legs, causing it to splash, burning my legs causing me to scream, which made me drop my cigarette from my mouth, ruined my shirt, and disconnected an important phone call I was making.

MEAT PIE
3 pounds ground round meat.
6 eggs.
China Lilly Steak and Mushroom Sauce.
1 package Onion Soup Mix.
Pastry.
Brown meat, cool, beat eggs. Combine all ingredients.
Pour into individual piecrusts or one large crust.
Cover with pastry, vent tops.
Bake 350 degrees-1 hour.
JIFFY PUDDING
½ cup sugar.
Pinch of salt.
2 teaspoons baking powder.
½ cup milk.
2 tablespoons butter.
1-cup flour.
1 cup raising.
Mix together, pour into greased dish.
Mix 1 cup brown sugar.
1-teaspoon vanilla.
2 ½ cups boiling water.
Pour over the above batter.
Bake @ 350 degrees 30-40 minutes minimum.
BLUEBERRY MUFFINS
Preheat oven to 400 degrees F (200 C).
Grease muffin cups or line with muffins liners
Combine 1 ½ cups flour, ¾ cup sugar, salt and
baking powder. Place vegetable oil a 1 cup
measuring cup; add the egg and enough milk to
fill the cup. Mix this with flour mixture.
Fold in blueberries. Fill muffin cups right to top,
and sprinkle with crumb topping mixture..
To make crumb topping:
Mix together ½ cup sugar, 1/3 cup flour, ¼ cup butter
and 1 ½ teaspoons cinnamon. Mix with flour, and sprinkle
over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.
FOOD INFORMATION
Each year, salmonella from chicken and other food sources infect 3.4 million Americans, according to estimates by the Centres for Disease Control and Prevention.
To keep juices from leaking in your shopping cart, place chicken and meat in a sealed plastic bag. Buy chicken/or meat last before checking out. Keep all meat items in a separate bag, remove, and place in freezer as soon as you get home .
If you'll cook the chicken or meat within a couple of days, store it at 40 degrees or below. If longer freeze it.
Thaw frozen chicken in a refrigerator, inside its packaging and on a plate. Never thaw it on a counter.
When the inside is still frozen, the outside can warm up, providing a breeding ground for bacteria.
Cook chicken to at least 165 degrees. Even if it's no longer pink, it can still harbour bacteria, so use a meat thermometer.
Don't return cooked meat to the plate that held it raw.
Refrigerate or freeze leftovers within two hours of cooking.
RESPONSIBLE DRINKING
If you have teenagers, or in fact any adult, impress on them the risks of driving while intoxicated. Statistics demonstrate drunk drivers cause many fatal road accidents.
If you're having a party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks.
BAR MIXES
BOLO
2 jiggers light rum.
juice of ½ lemon.
juice of ¼ orange.
1 teaspoon powdered sugar.
Shake with ice and strain.
BLACK VELVET
In tall glass add half chilled Guinness stout,
and half chilled champagne. Stir quickly.
DRINKS
ACAPULCO GOLD
3 ounces pineapple juice.
½ ounce concentrated grapefruit (undiluted) juice.
1-ounce coconut cream.
1-ounce fresh cream.
Shake with a large scoop of shaved ice, and serve in tall glass
