Grandma’s Beef-Stew & Dumplings
1 pound………………(500 g)…………………stew beef
3 tablespoons(45 ml)…………………flour
1 clove of garlic
salt and pepper to taste
1 medium size onion, chopped
3 carrots
1 turnip, diced
1 bay leaf
Cut meat into cubes. Roll in flour and brown in hot oil.
Add chopped onion and garlic. Add salt and pepper to taste.
Stir until onion is a golden brown. Add enough water to cover
the meat. Bring to a boil. Simmer gently for 1 ½ -2 hours.
Add rest of vegetables ½ hour before stew is served.

YIELD: serves 4-6
TIME: 15 minutes preparation, approx.2 hours to cook

Dumplings

2 cups………………………………..(500 ml)………………………all purpose flour
4 teaspoons…………………….(20 ml)……………………………baking powder
½ teaspoon…………………………(2,5 ml)……………………….salt
2 tablespoons…………………(30 ml)……………………………shortening
¾ cup…………………………………….(185 ml)…………………milk
Sift flour. Add baking powder and salt and sift again.
Cut in the shortening and add milk. Drop into simmering stew
gently, being careful to drop a piece of meat or vegetable so
that it will not be immersed. Cover the kettle.

Apple Slice Pancakes
INGREDIENTS
1 Granny Smith apple
1 1/4 cup any type pancake mix
1/2 teaspoon cinnamon
1 egg
2 teaspoons canola oil
1 cup low-fat milk
Lightly coat a griddle or skillet with cooking spray and heat over medium heat.
Peel, core and thinly slice apple into rings.
In a large mixing bowl, combine ingredients for pancake batter. Stir until ingredients are evenly moist. (Small lumps are ok! Over-mixing makes pancakes tough.)
For each pancake, place apple ring on griddle and pour about 1/4 cup batter over apple ring, starting in the center and covering the apple.
Cook until bubbles appear. Turn and cook other side until lightly brown.

Serving Size: 2 pancakes
Yield: 6 servings

Baked Fish and Vegetables
4 frozen white fish fillets or cod or perch (total of 16-20 oz.)
16 ounces frozen mixed vegetables
1 small diced onion
1 teaspoon lemon juice or fresh lemon, sliced thin
1 Tablespoon parsley flakes - dried or fresh chopped
4 10x12 -inch tin foil squares
Preheat oven to 450 degrees.

Separate and place fish fillets in center of each tin foil square.
Combine frozen vegetables and diced onion in bowl and mix. Spoon vegetables around fillets.
Sprinkle with lemon juice (or top with lemon slice) and add parsley on top. Fold ends of tin foil together to form leak-proof seal.
Bake for 10 minutes. Serve
Serving Size: 4 oz. fish and 1/2 cup vegetables
Yield: 4 servings
Time: 40 minutes

Hawaiian Chicken
1 teaspoon oil or margarine
2 1/2 pounds chicken, boneless skinless
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (6 ounces) pineapple juice, frozen concentrate
2 cans (12 ounces) water
Defrost the pineapple juice.
Grease a large frying pan. Heat the pan on low.
Put the chicken parts in the hot pan. Sprinkle with salt and pepper.
Cook until the chicken begins to brown.
Add the defrosted pineapple juice to the pan.
Swish the water in the can, and add it to the pan.
Cover and cook slowly, turning now and then, for 50 minutes or until the chicken is fork tender.
Put the chicken on a warm platter.
Skim the fat from the chicken juices in the pan.
Boil down the juices until they are slightly thickened (about 5 minutes).
Return the chicken to the pan. Reheat it for a few minutes.

LIGHTSIDE

A wife was making breakfast of fried eggs for her husband, when he burst into the kitchen. “Careful”, he said. CAREFUL! Put in some more butter. Oh WHAT ARE YOU DOING! You are cooking too may at once. TOO MANY! TURN THEM DOWN NOW! Are you CRAZY? USE THE SALT!!! THE SALT!!THE SALT NOW!!

The wife stared at him. “What in the world is wrong with you? You think I don’t know how to fry a couple of eggs?”

The husband calmly replied, “I wanted to show you what it feels like when I am driving”.

VEGAN

A vegan's diet includes foods such as: beans, lentils, nuts, seeds, soya products (for protein), whole grains, vegetables, fruits and healthy oils.

People choose to become vegan for various reasons, the most popular include:
-Ethical views concerning animal rights
-Concern for the environment
-To improve personal health
-Spiritual or religious beliefs

VAGAN RECIPE
Sweet Potato And Apple Delight
4 cups medium sweet potatoes peeled and finely chopped.
2 green apples, cored, thinly sliced.
½ cup raisins.
1 teaspoon cinnamon.
1 cup apple juice.
½ cup bread crumbs.
½ cup walnuts.
Preheat oven to 375F in a large casserole dish, mix together all the ingredients. Bake uncovered for 45-50 minutes. Makes 4-6 servings

Vegan Pancakes
Ingredients:

1 1/2 cups unbleached white flour
3 tablespoons organic sugar
1 3/4 teaspoons baking powder
Dash of salt
3 dashes of nutmeg
1 to 1 1/4 cups soymilk
3 tablespoons vegetable oil
1 Energy Egg Replacer (found at health food stores)

BEWARE FDA SCAM
As part of a fraudulent scheme to extort money from consumers, callers have falsely identified themselves as officials from the Food and Drug Administration (FDA). Consumers should know that FDA officials never contact consumers by phone to demand money or any other form of payment. "Impersonating an FDA official is a violation of federal law," says Michael Chappell, FDA's acting associate commissioner for regulatory affairs.

Offers of Discounted Prescription Drugs
Several instances have been reported to FDA of calls enticing consumers to purchase discounted prescription drugs by wiring funds to one of several locations in the Dominican Republic. No medications are ever delivered.

A subsequent call is received from a fraudulent "FDA special agent" informing the consumer that a fine of several thousand dollars is required to be sent to an address in the Dominican Republic to prevent incarceration or other legal action.

Report complaints or information regarding this scheme to FDA's Office of Criminal Investigations at (800) 521-5783.

CLEANING TIPS
Commercial cleaning supplies can aggravate your allergies and have long terms effects on your health. You can save on your house-cleaning bill with very good results using less toxic substances. Before washing, it is essential that all stains be removed. Sometimes Soap or hot water will set a stain and make its removal impossible.

RESPONSIBLE DRINKING

If you have teenagers, or in fact any adult, impress on them the
risks of driving while intoxicated. Statistics demonstrate drunk
drivers cause many fatal road accidents.

It should be known that like any other drug, addiction is a
potential hazard. Excess of alcohol will affect organs such as the brain, heart, and liver.

BAR MIXES
Apple Cocktail
½ ounce applejack
½ ounce apple cider
¼ ounce gin
¼ ounce brandy
Shake with ice cubes. Strain into chilled cocktail glass.

Trader Vic’s Rum Fizz
1 ½ ounces light Puerto Rican rum
1 ounce lemon juice
2 teaspoons bar sugar
1 egg
½ ounce cream soda
Grated orange peel
Shake all ingredients except orange peel in electric mixer (or
in shaker can with mixing glass) with ice cubes. Strain into fizz glass. Sprinkle with grated orange peel.

Fresh Fruit Punch
8 ounces apiece of orange juice, pineapple juice, and grapefruit juice.
1 bottle ginger ale. Sugar to taste.
Combine the juices with the sugar. Stir until the sugar is dissolved and refrigerate. Add the ginger ale plus chunks of ice before serving.
