POLISH PEROGIES
Everyone enjoys this dish. It’s one I could eat every day.
Dough.
5 cups flour.
2 cups warm water.
1 tablespoon salt.
4 tablespoons oil.
3 eggs.
1 tablespoon vinegar.
Mix flour and salt together.
Mix eggs, oil and water to make 2 cups.
Make well in flour add water mixture.
Mix well then knead. (the more you knead the better).
Roll dough flat, thin and cut into 2-3 inch squares.
Put filling (below) in each, seal edge, and use flour to pinch
seal shut.
FILLING
Mashed potatoes.
Course cottage cheese.
Salt and pepper.
Mix together until course.

Drop into boiling water and boil for 5 minutes. Do not place to
many in boiling water at one time as they all should have enough
room to float to top.

After cooking place in different pot and add butter, or
place in frying pan, add butter, and (onions) if you
prefer. Fry for a few minutes until they start turning
a light brown. Can then be served with or without sour cream.

MEXICAN SALAD
2 cucumbers.
2 oranges .
1 lemon or lime (the juice).
1/2 teaspoon chilli powder.
1/2 teaspoon salt.
Wash the cucumbers, oranges and lemon or lime under cold running water.

2. Slice the cucumbers. Peel and cut the oranges into small pieces.
Place cucumber and oranges in a medium size bowl. Add chilli powder, lemon or limejuice and salt.
Serving Size: 1/4 of recipe.
Yield: 4 servings.

CHOP SUEY
2 cups Elbow macaroni.
1/2 pound hamburger.
1 (10 oz) can stewed tomatoes.
Cook macaroni as directed on package.
While it is cooking, brown and drain the hamburger.
Drain macaroni.
Mix macaroni, hamburger and stewed tomatoes in large pot and heat through. Serve.


LIGHTSIDE
Wives will outsmart you every time. I told my wife "50 years ago we had a cheap suite, no car, a black and white TV, but I got to sleep every night with a hot 23 year old gal. Now I have a million dollar home, a $80,000.00 car, plasma screen TV, but I am sleeping with a 65 year old woman".

My wife is a very reasonable woman. She told me to go out and find a 23 year old hot gal and she would make sure that I once again would be living in a cheap suite, no car, sleep on a sofa bed, and watch the news on a 10 inch black and white TV.

VEGAN INFORMATION
Vegan:
A person that chooses a lifestyle that aims to eliminate the use of products obtained from animals for food, clothing or any other reason. This means that they don't eat any meat, fish, dairy products or eggs. They also avoid products that are tested on animals and do not wear fur, wool or leather.
A Vegan’s diet includes foods such as: beans, lentils, nuts, seeds, Soya products (for protein), whole grains, vegetables, fruits and healthy oils.
People choose to become vegan for various reasons, the most popular include -
-Ethical views concerning animal rights.
-Concern for the environment.
-To improve personal health.

Vegan Stuffed Bell Peppers

Ingredients:
· 1 medium onion chopped
· 2 cloves garlic, chopped
· 2 Tbs. Extra virgin olive oil
· 10 medium sized mushrooms, sliced
· 1 stalk of green onion, chopped
· 1 15-oz. can of beans of your choice (black, garbanzo or pinto work well!)
· ½ Tbs. Cumin
· ½ Tbs. Turmeric
· 3 cups of diced tomatoes or your favourite tomato sauce (try to pick one low in sodium)
· 2 cups quinoa or brown rice, cooked on the side separately
· 6 large assorted bell peppers, seeds and ribs removed
Optional:
· 1 cup vegan cheese, try the “Daiya” brand
· juice of 1 lemon
· salsa or guacamole
Directions:
Preheat the oven to 350°F.
In a saucepan or deep frying pan, heat the oil. Add the onion and garlic. Mix until onion is slightly translucent. Add the mushrooms and sauté for approximately 2 minutes. Then add the tomatoes, green onion and spices, simmering for 5 minutes.
Stir in the beans and cooked grain of your choice (quinoa, brown rice etc.). Mix well and cook on medium heat until the whole mixture is warm. This takes about 5 minutes.
Scoop about 1 cup of your mixture into each pepper, or until it is nearly full.
Once your oven is ready, place your stuffed peppers in a covered baking pan and bake for 1 hour. A casserole dish works great, or you could cover a pan with aluminium foil.
Optional:
In the last 10 minutes, cover the peppers with the vegan cheese and cook until is has melted.
Serve with salsa, guacamole or a squeeze of lemon on top!

Vegan (Brown) Rice Pudding!

Here’s an old classic from our household, but with a new healthy twist. We’ve updated this recipe to make it packed with nutrition, and I promise that it will still taste great!

Ingredients:

1 cup brown rice
2 ½ cups water
½ tsp sea salt

3 ½ cups soy milk (or almond milk)
2 Tbsp vegan margarine, (Earth balance works well)
4 Tbsp sweetener of your choice (try pure maple syrup, or organic sugar)
2 tsp cinnamon
1 tsp vanilla extract

Optional (but highly recommended):

½ cup raisins or other dried fruit such as cherries or mulberries

Directions:

Measure out the brown rice and rinse it under hot water for a minute. Be sure to pick out any impurities.
Bring a pot of water to a boil, then add the brown rice. Bring everything to a simmer, turn heat to low, cover and cook for about 45 minutes.
Once all the liquid has evaporated and your rice is tender, you are ready!
Let the rice cool in a bowl on the side while you prepare your mixture.

In another pot, add the soy milk, sweetener, spices and margarine. You can add the optional dried fruit in this step if you choose. Warm the mixture on medium heat while stirring every few seconds.
Once the mixture is simmering, you can add the brown rice. Keep stirring and let some of the liquid reduce. This takes about 20-25 minutes.
Once it is at the consistency you desire (some people like a thicker mixture while others do not), turn off the stove and dish out the rice pudding into bowls.

Serve with hemp, chia or flax seeds on top, or nuts of your choice like pecans or almonds.
Feel free to include some fresh fruit or berries to complete this healthy treat. Or add a bit more marg or almond butter to melt on top, and sprinkle some extra cinnamon. The possibilities are endless. Enjoy!


Super Easy Vegan Pasta Salad.

2 cups whole wheat pasta, cooked & cooled.
2 ripe tomatoes, chopped.
1/2 green pepper, chopped.
1 green onion, thinly sliced.
1/4 cucumber, chopped.
1/2 cup organic sugar.
1/2 cup vegetable oil.
1/3 cup ketchup.
1/4 cup vinegar.
1 teaspoon salt.
1/4 teaspoon pepper.
1 teaspoon paprika.
Directions:
Mix together the sugar, ketchup, vinegar, oil, salt, pepper and paprika. Pour the dressing over the pasta and veggies, and stir well.

VEGAN

One of my granddaughters practices vegan. (See last issue, explains just what is Vegan). She made a shake last night and I had a taste of it. Surprise, it tasted great. Below is the recipe for Banana Shake. Easy to make.

1 ½ cups soy milk.
6-7 large dates, pitted.
2 frozen bananas
Place all in a blender, stir all the ingredients until thick and creamy. If you want a thinner shake use ½ cup soy milk more. Makes 2 servings.

Food information

Don’t just guess to tell when meat, poultry and seafood are done. Instead, use a food thermometer to make sure foods have reached at least the following internal temperatures:
Steaks: 145 degrees F (medium rare).
Ground beef: 160 degrees F.
Chicken breasts: 165 degrees F.
Whole poultry: 165 degrees F.
Pork: 160 degrees F.
Fish: 145 degrees F.

WARNING: DO NOT MIX BLEACH AND AMMONIA TOGETHER, THE FUMES CAN BE DEADLY.

Squeaky Clean Kitchen
Germs and kitchen are like a married couple, always close by.
Germs really love the kitchen, especially sponges, dishcloths and
sinks. You can disinfect all three by soaking sponges, and
dishcloths for 5-10 minutes in the sink in a solution of ¾ cup
Clorox Regular Bleach and one gallon of water. Rinse with clean
water and let dry.

You can use the same solution to disinfect food spills, refrigeration, door handles.

Touching surfaces that have germs on them, such as faucets, can
spread bacteria, cutting boards, tables, phones, light switches,
anything touched by humans, animals.

Stain Removal Tips

Mix 50-50 water, white vinegar. Great for stubborn carpet stains. By the way vinegar placed in saucers around a room makes a good deodorizer

BAR MIXES
Trader Vic’s Rum Fizz.
1 ½ ounces light Puerto Rican rum.
1 ounce lemon juice.
2 teaspoons bar sugar.
1 egg.
½ ounce cream soda.
Grated orange peel.
Shake all ingredients except orange peel in electric mixer (or in
shaker can with mixing glass) with ice cubes. Strain into fizz glass.
Sprinkle with grated orange peel

BOLO
2 jiggers light rum.
juice of ½ lemon.
juice of ¼ orange.
1 teaspoon powdered sugar.
Shake with ice and strain.

BLACK VELVET
In tall glass add half chilled Guinness stout,
and half chilled champagne. Stir quickly.

NON- ALCOHOLIC DRINKS

ACAPULCO GOLD
3 ounces pineapple juice.
½ ounce concentrated grapefruit (undiluted) juice.
1-ounce coconut cream.
1-ounce fresh cream.
Shake with a large scoop of shaved ice, and serve in tall glass

ORGEAT FIZZ
1 ½ ounces orgeat syrup
½ ounce limejuice
Club Soda
Shake orgeat and lime juice with ice cubes. Strain into fizz
Glass. Add ice cubes. Add soda to glass. Serve with straws.

ICED COFFEE
There are just as many ways of making coffee, as there are different brands. Here are some general rules.

For good results measure water and coffee.
2 tablespoons coffee to each 1 cup
Make coffee just before serving
Make coffee double strength and pour the hot coffee over ice in a tall glass. As the ice melts, it will dilute the coffee. Top the glass with whipped cream or vanilla ice cream.
