POLISH PYROGY&lt;BR&gt;
Everyone enjoys this dish. It&amp;#146;s one I could eat every day.&lt;BR&gt;
Dough&lt;BR&gt;
5 cups flour&lt;BR&gt;
2 cups warm water&lt;BR&gt;
1 tablespoon salt&lt;BR&gt;
4 tablespoons oil&lt;BR&gt;
3 eggs&lt;BR&gt;
1 tablespoon vinegar&lt;BR&gt;
Mix flour and salt together.&lt;BR&gt;
Mix eggs, oil and water to make 2 cups.&lt;BR&gt;
Make well in flour add water mixture.&lt;BR&gt;
Mix well then knead. (the more you knead the better)&lt;BR&gt;
Roll dough flat, thin and cut into 2-3 inch squares&lt;BR&gt;
Put filling (below) in each, seal edge, and use flour to pinch &lt;BR&gt;
seal shut.&lt;BR&gt;
FILLING&lt;BR&gt;
Mashed potatoes.&lt;BR&gt;
Course cottage cheese.&lt;BR&gt;
Salt and pepper.&lt;BR&gt;
Mix together until course.&lt;BR&gt;
&lt;BR&gt;
Drop into boiling water and boil for 5 minutes. Do not place to &lt;BR&gt;
many in boiling water at one time as they all should have enough &lt;BR&gt;
room to float to top.&lt;BR&gt;
&lt;BR&gt;
After cooking place in different pot and add butter, or&lt;BR&gt;
place in frying pan, add butter, and (onions) if you &lt;BR&gt;
prefer. Fry for a few minutes until they start turning&lt;BR&gt;
a light brown. Can then be served with or without sour cream.&lt;BR&gt;
&lt;BR&gt;
MEXICAN SALAD&lt;BR&gt;
2 cucumbers &lt;BR&gt;
2 oranges &lt;BR&gt;
1 lemon or lime (the juice) &lt;BR&gt;
1/2 teaspoon chilli powder &lt;BR&gt;
1/2 teaspoon salt&lt;BR&gt;
Wash the cucumbers, oranges and lemon or lime under cold running water. &lt;BR&gt;
&lt;BR&gt;
2. Slice the cucumbers. Peel and cut the oranges into small pieces.&lt;BR&gt;
Place cucumber and oranges in a medium size bowl. Add chilli powder, lemon or limejuice and salt.&lt;BR&gt;
Serving Size: 1/4 of recipe. &lt;BR&gt;
Yield: 4 servings.&lt;BR&gt;
&lt;BR&gt;
CHOP SUEY&lt;BR&gt;
2 cups Elbow macaroni. &lt;BR&gt;
1/2 pound hamburger. &lt;BR&gt;
1 (10 oz) can stewed tomatoes.&lt;BR&gt;
Cook macaroni as directed on package.&lt;BR&gt;
While it is cooking, brown and drain the hamburger.&lt;BR&gt;
Drain macaroni.&lt;BR&gt;
Mix macaroni, hamburger and stewed tomatoes in large pot and heat through. Serve.&lt;BR&gt;

Now I have a million dollar home, a $80,000.00 car, plasma screen TV, but I am sleeping with a 65 year old woman&amp;quot;. &lt;BR&gt;

My wife is a very reasonable woman. She told me to go out and find a 23 year old hot gal and she would make sure that I once again would be living in a cheap suite, no car, sleep on a sofa bed, and watch the news on a 10 inch black and white TV.&lt;BR&gt;
&lt;BR&gt;
MEXICAN SALAD CURRIED&lt;BR&gt;
2 cucumbers &lt;BR&gt;

A Vegan&amp;#146;s diet includes foods such as: beans, lentils, nuts, seeds, Soya products (for protein), whole grains, vegetables, fruits and healthy oils.&lt;BR&gt;

Super Easy Vegan Pasta Salad&lt;BR&gt;
2 cups whole wheat pasta, cooked &amp;amp; cooled&lt;BR&gt;
2 ripe tomatoes, chopped&lt;BR&gt;
1/2 green pepper, chopped&lt;BR&gt;
1 green onion, thinly sliced&lt;BR&gt;
1/4 cucumber, chopped&lt;BR&gt;
1/2 cup organic sugar&lt;BR&gt;
1/2 cup vegetable oil&lt;BR&gt;
1/3 cup ketchup&lt;BR&gt;
1/4 cup vinegar&lt;BR&gt;
1 teaspoon salt&lt;BR&gt;
1/4 teaspoon pepper&lt;BR&gt;
1 teaspoon paprika&lt;BR&gt;
Directions:&lt;BR&gt;
Mix together the sugar, ketchup, vinegar, oil, salt, pepper and paprika. Pour the dressing over the pasta and veggies, and stir well.&lt;BR&gt;

Don&amp;#146;t just guess to tell when meat, poultry and seafood are done. Instead, use a food thermometer to make sure foods have reached at least the following internal temperatures: &lt;BR&gt;
Steaks: 145 degrees F (medium rare)&lt;BR&gt;
Ground beef: 160 degrees F&lt;BR&gt;
Chicken breasts: 165 degrees F&lt;BR&gt;
Whole poultry: 165 degrees F&lt;BR&gt;

1 egg&lt;BR&gt;

Grated orange peel&lt;BR&gt;
Shake all ingredients except orange peel in electric mixer (or in &lt;BR&gt;
shaker can with mixing glass) with ice cubes. Strain into fizz glass. &lt;BR&gt;

Combine the juices with the sugar. Stir until the sugar is&lt;BR&gt;
dissolved and refrigerate. Add the ginger ale plus chunks of ice before serving.&lt;BR&gt;

GRANDMA HYSTAD’S TURKEY&lt;BR&gt;
1 whole turkey fresh or thawed (12 -13 lbs.)  &lt;BR&gt;
1/2 cup of butter  &lt;BR&gt;
1 cup of mixture of fresh chopped herbs (thyme, tarragon, sage, summer savoury etc.)  &lt;BR&gt;
Salt and pepper &lt;BR&gt;
1 whole peeled onion&lt;BR&gt;
Mix the butter and herbs and set aside. &lt;BR&gt;
&lt;BR&gt;
Clean the turkey inside and outside and drain dry. &lt;BR&gt;
Using your hands, slide through the skin and the meat of the breast and thighs as much as you can.  Now take knobs of the herbed butter and spread it all over underneath the skin and onto the breasts and thighs.  Also rub some of the butter all over the outside skin as well.&lt;BR&gt;
  &lt;BR&gt;
Sprinkle salt and pepper all over the bird and inside cavity.  Put the whole onion into the cavity of the bird.  &lt;BR&gt;
Put the bird onto a disposable aluminum-roasting pan and put it into a hot BBQ, cooking it using indirect heat.  Ensure the BBQ is about 325 -350 degrees throughout the cooking process. Adjust temperature if needed.&lt;BR&gt;
  &lt;BR&gt;
Baste every ½ -hour for about 2 hours until temperature reads 180° at the thigh level. Tent the turkey with aluminum foil loosely around the pan if the skin is browning too fast. &lt;BR&gt;
Let rest 10-15 minutes before carving.&lt;BR&gt;
Cooking time two hours&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S BAKED HAM AND APPLES&lt;BR&gt;
2 large slices of ham steak.&lt;BR&gt;
2 teaspoons……………..(10 ml)………………….prepared mustard.&lt;BR&gt;
4 tablespoons………….(60 ml)……………………brown sugar.&lt;BR&gt;
2 tart apples.&lt;BR&gt;
1 ½ cups…………………………(375 ml)…………………apple juice.&lt;BR&gt;
&lt;BR&gt;
Place the ham in baking dish and rub with mustard.  Sprinkle&lt;BR&gt;
with 2 tablespoons (30 ml), of brown sugar.  Core the apple&lt;BR&gt;
and cut into thin slices.  Cover the ham with the apple slices&lt;BR&gt;
and sprinkle with rest of brown sugar.  Add apple juice. Bake&lt;BR&gt;
at 300 F, (150 C), for 30 minutes or until tender.&lt;BR&gt;
YIELD:  4-5 servings.&lt;BR&gt;
TIME:  40 minutes.&lt;BR&gt;
&lt;BR&gt;
AUNT PAT’S FAVOURITE BUTTER TARTS&lt;BR&gt;
1/3-cup ………………………(80 ml) …………………butter.&lt;BR&gt;
1-cup………………………………(250 ml)…………………brown sugar.&lt;BR&gt;
2 tablespoons…………(30 ml)……………………milk or cream..&lt;BR&gt;
1/3 cup……………………….(80 ml)……………………currants&lt;BR&gt;
1 egg beaten well.&lt;BR&gt;
1 teaspoon……………….(5 ml)………………………vanilla.&lt;BR&gt;
&lt;BR&gt;
Mix all ingredients together.  Put in unbaked tart shells.  &lt;BR&gt;
Bake at 450 F, (230 C), for 8 minutes.  Turn down to 350 F,&lt;BR&gt;
(175 C), and cook until brown.&lt;BR&gt;
&lt;BR&gt;
MOM'S MINCEMEAT COOKIES&lt;BR&gt;
¾ cup............(185 ml)........shortening&lt;BR&gt;
&lt;BR&gt;
1 ½ cups.........(375 ml).....sugar&lt;BR&gt;
&lt;BR&gt;
3 eggs beaten&lt;BR&gt;
&lt;BR&gt;
3 cups.........(750 ml).......flour&lt;BR&gt;
&lt;BR&gt;
¾ teaspoon.....(3.75 ml)......salt&lt;BR&gt;
&lt;BR&gt;
1 teaspoon.....(4 ml).........soda&lt;BR&gt;
&lt;BR&gt;
1 cup..........(250 ml........canned mincemeat&lt;BR&gt;
&lt;BR&gt;
3 tablespoons..(45 ml).......water&lt;BR&gt;
&lt;BR&gt;
1 cup.........(250 ml)........walnuts &lt;BR&gt;
&lt;BR&gt;
GRANDMA”S SHORTBREAD&lt;BR&gt;
1-cup butter  &lt;BR&gt;
2 cups all-purpose flour  &lt;BR&gt;
½ cup fruit sugar&lt;BR&gt;
In a large bowl, cream the butter. &lt;BR&gt;
Add sugar to creamed butter and cream the mixture together. &lt;BR&gt;
Slowly mix in 1-½ cups of the flour. &lt;BR&gt;
&lt;BR&gt;
Place mixture on clean surface and knead in the remaining flour. &lt;BR&gt;
Spread mixture in an 8 x 8-inch baking pan. Alternatively, you can form them into 2 big cookies, each ½ inch thick, and place on a non-stick baking tray. Using a fork, punch holes all over mixture. Bake at 300°F for 40-45 minutes.&lt;BR&gt;
&lt;BR&gt;
VEGAN RECIPES&lt;BR&gt;
Marinated Tofu:&lt;BR&gt;
&lt;BR&gt;
Ingredients:&lt;BR&gt;
1 or 2 packs of tofu, extra firm&lt;BR&gt;
2 tbsp olive oil&lt;BR&gt;
Spices (whatever you like, curry, oregano, chilli, turmeric, a BBQ spice mix, thyme, rosemary)&lt;BR&gt;
Salt and pepper to taste&lt;BR&gt;
&lt;BR&gt;
Instructions:&lt;BR&gt;
Drain and rinse the tofu. In a bowl, mix the oil and spices. Cut tofu into strips, place on a baking sheet and cover with the marinade. Place in fridge overnight (or an hour if you’re crunched for time). Once the tofu has had a chance to soak up the flavours, bake it in the oven at 350 degrees Celsius for about 20 minutes and flip tofu as needed or you can grill them on the barbeque or in a frying pan.&lt;BR&gt;
&lt;BR&gt;
Raw Vegan Banana Ice Cream&lt;BR&gt;
&lt;BR&gt;
Simple, delicious and nutritious!&lt;BR&gt;
&lt;BR&gt;
Ingredients:&lt;BR&gt;
4 (or more) frozen bananas &lt;BR&gt;
food processor.&lt;BR&gt;
&lt;BR&gt;
Instructions:&lt;BR&gt;
Peel the frozen bananas with a knife. Cut into pieces and put in food processor. Blend until smooth, creamy consistency.&lt;BR&gt;
&lt;BR&gt;
Get creative and try adding frozen strawberries or raw cacao nibs or Gobi berries. Even unsweetened coconut flakes or some almond butter is delicious on top. So many possibilities and so yummy! &lt;BR&gt;
&lt;BR&gt;

A priest dies and is in line at the Pearly Gates. Saint Peter asked the guy ahead of him his name.  The guy replies, “I am Sam Horton, taxi driver from New York.” Saint Pater gives him a silken robe and golden staff and said, “Enter the Kingdom of Heaven.”&lt;BR&gt;
&lt;BR&gt;
Now it’s the priest‘s turn. He booms out “ I am the Right Reverend Anderson.” Saint Peter gives him a cotton robe and a wooden staff, and says to the Priest, “Enter the Kingdom of Heaven.”  Taken back the priest asks, “ That man was a taxi driver why does he get a silken robe and golden staff”.&lt;BR&gt;
&lt;BR&gt;

Tips to prepare turkeys safely: &lt;BR&gt;
&lt;B&gt; a whole turkey should be cooked at an oven temperature of 325 degrees Fahrenheit. &lt;BR&gt;
&lt;/B&gt; An 8-12 pound unstuffed turkey should be cooked for 2-3 hours. &lt;BR&gt;
* Preparers should use a meat thermometer. Every part of the turkey should reach a minimum internal temperature of 165 degrees Fahrenheit. &lt;BR&gt;
Frozen turkeys should be kept frozen until ready to thaw.&lt;BR&gt;

To avoid potential cross-contamination and the spread of food borne illness, follow these steps:&lt;BR&gt;
Make sure to keep raw meat away from other foods, including vegetables such as lettuce and tomatoes. You can do this by packing meats separately or by making sure they are wrapped separately, so that juices don't leak out onto other foods.&lt;BR&gt;
Wash your hands carefully with soap and warm water for at least 20 seconds before and after handling raw meat.&lt;BR&gt;
Clean all your cooking equipment, utensils and work surfaces, and then sanitize them with a mild bleach solution, in the following manner: &lt;BR&gt;
Combine 5 mL (1 tsp) of bleach with 750 mL (3 cups) of water in a labelled spray bottle.&lt;BR&gt;
Spray the bleach solution on the surface/utensil and let stand briefly.&lt;BR&gt;
Rinse with lots of clean water and air dry (or use clean towels).&lt;BR&gt;
&lt;BR&gt;
Thawing should be done in the refrigerator. Sealed packages can be thawed in cold water. Microwave defrosting is acceptable if the food item is placed immediately on the grill. Meat should be completely thawed before grilling so that it cooks more evenly.&lt;BR&gt;

Improper cleaning and sanitizing of eating and cooking utensils, work areas and equipment. &lt;BR&gt;
Contamination of food, utensils and equipment from flies, roaches and other pests. &lt;BR&gt;

If you're having a Christmas party, provide food with drinks. &lt;BR&gt;
Offer non-alcoholic substitutes such as fruit, soft drinks.&lt;BR&gt;
&lt;BR&gt;
2 drinks taken within an hour by a person 100 pounds produces a&lt;BR&gt;
075 reading.  One drink is equal to about 1.5 oz. of whisky or 2&lt;BR&gt;
bottles of beer. The rate of elimination for each hour after &lt;BR&gt;
drinking has stopped is 015.  A 200-pound person, after 1 drink &lt;BR&gt;
produces a reading of .019, so you can see there is a big&lt;BR&gt;
difference due to weight.&lt;BR&gt;
&lt;BR&gt;
As a host it is your duty to make sure no one leaves your party &lt;BR&gt;
impaired.  Have some one drive them home.&lt;BR&gt;
&lt;BR&gt;
BAR MIXES, Drinks&lt;BR&gt;
EGGNOG&lt;BR&gt;
4 eggs, 4 cups milk, 4 tablespoons lemon juice ½ cup cream.  &lt;BR&gt;
1/8 teaspoon nutmeg, 1/8 teaspoon salt, 1/3 cup sugar.&lt;BR&gt;
Beat eggs until thick and lemon colour&lt;BR&gt;
Add sugar, nutmeg, and lemon juice&lt;BR&gt;
Add ice-cold milk and cream&lt;BR&gt;
Beat with rotary beater until frothy&lt;BR&gt;
Makes: 6 large glasses&lt;BR&gt;
&lt;BR&gt;
Christmas Juice Punch.&lt;BR&gt;
2 quarts apple juice.&lt;BR&gt;
2 quarts cranberry juice.&lt;BR&gt;
8 oz. lemon juice.&lt;BR&gt;
8 oz. Sugar.&lt;BR&gt;
2 bottles ginger ale.&lt;BR&gt;
Combine everything except the ginger ale.&lt;BR&gt;
Stir well.  Add ginger ale plus chunks of ice before serving.&lt;BR&gt;
&lt;BR&gt;
BLIZZARD.&lt;BR&gt;
3 ounces bourbon.&lt;BR&gt;
1 ounce cranberry juice.&lt;BR&gt;
1 teaspoon lemon juice.&lt;BR&gt;
2 teaspoons sugar syrup.&lt;BR&gt;
4 ounces crushed ice.&lt;BR&gt;
Combine in blender until the drink is thick.  &lt;BR&gt;
Serve straight up.&lt;BR&gt;

This issue will not carry any recipes.  Instead this issue is dedicated to honour our war veterans’ and all our soldiers around the world who are still fighting to preserver freedom for everyone.&lt;BR&gt;
 &lt;BR&gt;
Remember November 11th.and take a few moments at 11 AM to honour all the men and women who gave their lives so we can enjoy freedom in this great country.&lt;BR&gt;
&lt;BR&gt;
I Will Not Forget&lt;BR&gt;
&lt;BR&gt;
I know I will never forget, nor will my children and grandchildren.  Not only the ones who gave their lives, but all those who lost parts of their bodies, and if they were lucky to come back in one piece, seeing their buddies blown to bits next to them. Sometime they wished they had bought it too, having to live with the nightmares of war.&lt;BR&gt;
&lt;BR&gt;
Many got over the nightmares in the first couple of years, only to start getting flashbacks’ when they reached their late 70’s, and later. It affected them more when they got older then when they first came back. &lt;BR&gt;
&lt;BR&gt;
I had 5 brothers, 2 sisters in world war two.  One brother lived through the Dieppe Raid, and Normandy invasion, was wounded twice.  Another spend his 16th birthday in a POW camp, was in on the death march, spend over 6 months in hospital after he was freed.&lt;BR&gt;
&lt;BR&gt;
Another brother was in the Merchant Marines, (he was only 15).  When war broke out the CPR ship he was on had just left England, was the first ship lost when it was sank by a German u-boat.  They were picked up by another ship the next day and returned to England.  He joined the RCNVR, had 4 different ships he served on all torpedoed by U-Boats. (Remember 1939-43 was happy hunting for German U-Boats in the Atlanta Ocean).&lt;BR&gt;
&lt;BR&gt;
Just a strange footnote:  The brother that spend his 16th birthday in a German prison of war camp, when he came home applied for a policeman position. Passed all the tests, but had to produce a birth certificate.  He didn’t get the job because he had to be 21 years of age to carry a gun.  Welcome home.&lt;BR&gt;
&lt;BR&gt;
During the war in Canada you had to register on your 16th birthday.  You didn’t have to produce a birth certificate to register.  A lot registered when they were only 14. Registration, not birth certificate was used during the war. Now I can remember being refused service in a bar after the war when all I had to prove my age was my discharge papers.  &lt;BR&gt;
&lt;BR&gt;
No I will not forget.&lt;BR&gt;
&lt;BR&gt;
LIGHTSIDE&lt;BR&gt;
During World War 2, a soldier arrived at the city but found all hotel rooms taken. He begged the desk clerk for anything.  The hotel clerk said he had a double, there was a navy guy in it, but persons in rooms next to him said he snored so loud it was hard to sleep.&lt;BR&gt;
&lt;BR&gt;
The soldier agreed to take it.  When the soldier came down for breakfasts the manager asked, “How did you sleep”?  “Great” replied the soldier. “No problem with the other guy snoring all night”? Asked the manger. &lt;BR&gt;
&lt;BR&gt;
“No I shut him up in no time,” replied the soldier. “How did you manage that?” asked the manager.&lt;BR&gt;
“Well he was in bed snoring away when I walked into the room, so I gave him a kiss on the check” explained the soldier.  “Then I whispered in his ear ‘goodnight beautiful’, and he sat up all night watching me.”&lt;BR&gt;
&lt;BR&gt;
Remembrance Day November 11, Poppy Symbol&lt;BR&gt;
&lt;BR&gt;
IN FLANDERS FIELDS&lt;BR&gt;
&lt;BR&gt;
In Flanders fields the poppies blow&lt;BR&gt;
Between the crosses, row on row,&lt;BR&gt;
That mark our place; and in the sky&lt;BR&gt;
The larks, still bravely singing, fly&lt;BR&gt;
Scarce heard amid the guns below.&lt;BR&gt;
We are the Dead. Short days ago&lt;BR&gt;
We lived, felt dawn, saw sunset glow,&lt;BR&gt;
Loved, and were loved, and now we lie&lt;BR&gt;
In Flanders Fields.&lt;BR&gt;
Take up our quarrel with the foe:&lt;BR&gt;
To you from failing hands we throw&lt;BR&gt;

&lt;BR&gt;
Canadian physician and Lieutenant Colonel John McCrae wrote it on May 3, 1915, after he witnessed the death of his friend, Lieutenant Alexis Helmer, the day before.&lt;BR&gt;
&lt;BR&gt;
An official adaptation into French, used by the Canadian government in Remembrance Day ceremonies, was written by Jean Pariseau and is entitled Au champ d'honneur. To see it run your cursor over d’honneur above.&lt;BR&gt;

We Shall Keep the Faith&lt;BR&gt;

A CONDENSED REVIEW OF THE POPPY &lt;BR&gt;
&lt;BR&gt;
On 29 September 1920, the National American Legion convened in Cleveland and agreed to make the Flanders Fields Memorial Poppy its national emblem of remembrance.&lt;BR&gt;
&lt;BR&gt;
In September 1921, delegates at the Auxiliary to the American Legion Convention agreed that disabled American war veterans could make the poppies sold in the United States, thus generating much needed income for veterans who had no other income. The Auxiliary provided all the material and had it pre-cut for forming into flowers.&lt;BR&gt;
&lt;BR&gt;
Madame Guérin visited Earl Haig and persuaded him to adopt the Flanders Poppy for the British Legion, which was done in the autumn of 1921.&lt;BR&gt;
&lt;BR&gt;
In 1921, Field-Marshall Earl Haig, the former Commander-in-Chief of the British Armies in France and Belgium and the principal founder of the British Legion, was sold on Madame Guérin's fundraising idea and approved organization of the British Poppy Day Appeal by the Legion to raise money for poor and disabled veterans.&lt;BR&gt;
&lt;BR&gt;
The same year, Madame Guérin visited Canada, and convinced the Great War Veterans Association (predecessor to the Royal Canadian Legion) to similarly adopt the poppy as a symbol of remembrance in aid of fundraising. &lt;BR&gt;
&lt;BR&gt;
Today, the Poppy Campaign is one of the Royal Canadian Legion's most important programs. The money raised from poppy sales provides direct assistance for ex-service people in financial distress, as well as funding for medical appliances and research, home services, care facilities, and numerous other purposes.&lt;BR&gt;
&lt;BR&gt;
In Canada, from 1920 to 1980 the Royal Canadian Legion used black for the centre of the poppy. In 1980, the legion formed a committee, which decided that the centre should be green to represent the fields of France. This proved to be an unpopular decision and in 1986 they decided to return back to the traditional black centre. &lt;BR&gt;
&lt;BR&gt;
However, a large quantity of green felt had already been purchased, so it was decided to keep the green centre until all of the green was used up.&lt;BR&gt;
It took until 2002 for the green felt to run out and then the black centre reappeared.&lt;BR&gt;
&lt;BR&gt;
Since the poppy symbol is largely associated with Remembrance Day in Canada, the Canadian Mint has released a series of quarters into circulation that have the poppy imprinted on them in the centre of the coin.&lt;BR&gt;
&lt;BR&gt;
Last Wednesday I was in a hurry to leave my home to pick up my wife. As it was raining I grabbed a jacket, seen it had the red poppy, so I wore it.  When I met my wife and granddaughter, my granddaughter pointed out to me I was wearing the wrong poppy. The one I had on was an old one with the green centre. I felt like I was cheating, so I bought another even though I had bought 2 others with the black just 2 weeks before.&lt;BR&gt;
&lt;BR&gt;
I hope you all remembered and wore a poppy from October 31, to November 11th.&lt;BR&gt;

Thanksgiving Day is an annual one-day holiday to give thanks at the conclusion of the harvest season. The United States celebrates Thanksgiving on the fourth Thursday of November and Canada celebrates the holiday on the second Monday in October.&lt;BR&gt;
&lt;BR&gt;
Traditional celebration&lt;BR&gt;
In Canada, Thanksgiving is a three-day weekend (although some provinces observe a four day weekend, Friday–Monday). Traditional Thanksgiving meals prominently feature turkey, stuffing, cranberry sauce and mashed potatoes, though Canada's multicultural heritage has seen many families infuse this traditional meal with elements of their traditional ethnic foods.&lt;BR&gt;
&lt;BR&gt;
Most of us will have noticed that Canadian Thanksgiving comes well in advance of our neighbours to the south, and for all the predictable reasons: colder climate, earlier harvest, and of course have something first before our USA neighbour, eh!  &lt;BR&gt;
&lt;BR&gt;
We did actually have the FIRST Thanksgiving, a full 43 years before the pilgrims at Plymouth Rock. &lt;BR&gt;
Records at Port Royal, Nova Scotia, note an October 10, 1710. Thanksgiving celebration to mark the return of the town to the English. &lt;BR&gt;
&lt;BR&gt;
In 1879, Parliament formally declared November 6 as a day of Thanksgiving, until after the Armistice of WWI.  Thanksgiving and Remembrance Day would have been on the same week. It was then decided to assign Thanksgiving to the second Monday in October.&lt;BR&gt;
This year the USA host thanksgiving day on November 24.&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S WRAPPED TURKEY&lt;BR&gt;
Place dressed turnkey, breast up in centre of greased, wide,&lt;BR&gt;
heavy foil.  Bring ends of foil up over breast.  Overlap fold&lt;BR&gt;
and press up against ends of turkey.  Place bird in shallow pan.&lt;BR&gt;
Open foil last 20 minutes to brown.  Bake at 450 F, (230 C)&lt;BR&gt;
according to timetable.&lt;BR&gt;
&lt;BR&gt;

&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S BAKED HAM AND APPLES&lt;BR&gt;
2 large slices of ham steak&lt;BR&gt;
2 teaspoons……………..(10 ml)………………….prepared mustard&lt;BR&gt;
4 tablespoons………….(60 ml)……………………brown sugar&lt;BR&gt;
2 tart apples&lt;BR&gt;
1 ½ cups…………………………(375 ml)…………………apple juice&lt;BR&gt;
&lt;BR&gt;
Place the ham in baking dish and rub with mustard.  Sprinkle&lt;BR&gt;
with 2 tablespoons (30 ml), of brown sugar.  Core the apple&lt;BR&gt;
and cut into thin slices.  Cover the ham with the apple slices&lt;BR&gt;
and sprinkle with rest of brown sugar.  Add apple juice. Bake&lt;BR&gt;
at 300 F, (150 C), for 30 minutes or until tender.&lt;BR&gt;
YIELD:  4-5 servings.&lt;BR&gt;
TIME:  40 minutes&lt;BR&gt;
&lt;BR&gt;
Baked Apple Wedges&lt;BR&gt;
2-3 baking apples &lt;BR&gt;
½ teaspoon margarine&lt;BR&gt;
1/2 tablespoon sugar &lt;BR&gt;
ground cinnamon to taste&lt;BR&gt;
1/8 cup orange juice (optional)&lt;BR&gt;
&lt;BR&gt;
Peel, core, and cut apples into quarters or wedges, depending on the size of the apple. Place apples in 1 quart baking dish. Dot apples with margarine. Sprinkle apples lightly with sugar and cinnamon. Orange juice may be added if desired. Bake at 375 degrees until tender, about 30 minutes. Serves 2.&lt;BR&gt;
Pumpkin Cheese Pie&lt;BR&gt;
8 ounces cream cheese, reduced fat &lt;BR&gt;
8 ounces cream cheese, nonfat &lt;BR&gt;
2 eggs &lt;BR&gt;
4 egg whites &lt;BR&gt;
1 1/4 cups sugar &lt;BR&gt;
1 can (29 ounces) pumpkin &lt;BR&gt;
1 teaspoon ginger &lt;BR&gt;
1 Tablespoon cinnamon &lt;BR&gt;
2 - 9 inch graham cracker pie crusts&lt;BR&gt;
Preheat oven to 350 degrees. &lt;BR&gt;
&lt;BR&gt;
Place the cream cheese, eggs, and sugar in a large mixing bowl. Mix at medium speed until creamed. Add the remaining ingredients and mix at medium speed until ingredients are well mixed. &lt;BR&gt;
&lt;BR&gt;
Spoon the mixture evenly in each pie crust and place both in the oven for approximately 50 minutes until pies look firm in the middle.&lt;BR&gt;
Serving Size: 1 slice &lt;BR&gt;
Yield: 16 servings &lt;BR&gt;
Time: 65&lt;BR&gt;
&lt;BR&gt;
Vegan Turkey Recipe:&lt;BR&gt;
1 lb. Firm Tofu&lt;BR&gt;
Spice Marinade:&lt;BR&gt;
1.5 cups boiling hot water&lt;BR&gt;
3 Tbsp. olive oil (extra virgin, cold pressed is best)&lt;BR&gt;
2-4 cloves of garlic, chopped&lt;BR&gt;
½ Tbsp. dill&lt;BR&gt;
½ tsp. thyme&lt;BR&gt;
½ tsp. rosemary&lt;BR&gt;
½ tsp. pepper&lt;BR&gt;
½ tsp. sage&lt;BR&gt;
&lt;BR&gt;
In a bowl, mix the water, spices, garlic and oil together.&lt;BR&gt;
Cut the tofu in the desired shape. Try getting creative with it! Tofu is great because it is so versatile and will also soak up any spices you add to it! It’s a ‘blank canvas’!&lt;BR&gt;
Lay the slices of tofu in a pan, and cover with the marinade. Let it sit for at least an hour in the fridge (or try overnight if you have time!).&lt;BR&gt;
&lt;BR&gt;
Bake for ½ hour in the oven at 350 degrees Celsius, flip the tofu over, and then cook for an additional ½ hour or until browned.&lt;BR&gt;
&lt;BR&gt;
Serve with mashed potatoes, vegan gravy, veggies and enjoy!&lt;BR&gt;
&lt;BR&gt;

Bill, “keep it in the cow”.&lt;BR&gt;
&lt;BR&gt;
Vegan Apple Pie:&lt;BR&gt;
Pie Crust: (makes 2 crusts)&lt;BR&gt;
1 cup vegetable shortening&lt;BR&gt;
1 tsp. margarine (Earth Balance is a great brand)&lt;BR&gt;
¾ cup boiling water&lt;BR&gt;
3 ½ cups all purpose flour&lt;BR&gt;
2 Tbsp. baking powder&lt;BR&gt;
¼ tsp. salt&lt;BR&gt;
&lt;BR&gt;
Mix together the shortening, margarine and water in a large bowl. Then add the dry ingredients (flour etc.). Knead the dough for a few minutes, then cover the bowl with a hand towel or saran wrap, and let the dough sit for about 2-3 hours.&lt;BR&gt;
&lt;BR&gt;
When the dough is ready, place in a pie pan, bake at 350 degrees Celsius for 15 minutes, then cool and add Apple Pie filling!&lt;BR&gt;
&lt;BR&gt;
Filling:&lt;BR&gt;
&lt;BR&gt;
8 large baking apples, cored and sliced&lt;BR&gt;
¾ cup maple syrup&lt;BR&gt;
2 tbsp. lemon juice&lt;BR&gt;
2 tsp cinnamon&lt;BR&gt;
2 ½ tbsp. cornstarch&lt;BR&gt;
1/3 cup raisins or currants (optional)&lt;BR&gt;
&lt;BR&gt;
Preheat oven the 350 degrees Celsius.&lt;BR&gt;
Boil cut up apples in a medium pot of water and allow them to simmer for 10 minutes.&lt;BR&gt;
Drain apples and place into a large mixing bowl. **Save about ¼ cup of the apple water for later use. In the bowl of apples, add the rest of the ingredients and mix together well.&lt;BR&gt;
Pour the mixture into your piecrust and bake in the oven for about 40 minutes.&lt;BR&gt;
&lt;BR&gt;
Serve with vegan vanilla ice cream! Yummy! Just like Grandma used to make.&lt;BR&gt;
&lt;BR&gt;
RESPONSIBLE DRINKING&lt;BR&gt;
If you have teenagers, or in fact any adult, impress on them&lt;BR&gt;
the risks of driving while intoxicated.  Statistics demonstrate&lt;BR&gt;
many fatal road accidents are caused by drunk drivers.&lt;BR&gt;
&lt;BR&gt;
If you're having a Thanksgiving Day party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks.  As a host it is your duty to make sure no one leaves your party impaired.  Have some one drive them home.&lt;BR&gt;
&lt;BR&gt;
BAR MIXES&lt;BR&gt;
Festival Punch&lt;BR&gt;
1 quart Jamaica Rum&lt;BR&gt;
1 quart Sweet Apple Cider&lt;BR&gt;
2 or 3 sticks of Cinnamon, broken&lt;BR&gt;
2 tablespoons of butter&lt;BR&gt;
Heat ingredients in a heavy saucepan until almost boiling.  Serve hot in mugs.&lt;BR&gt;
Serves 10.&lt;BR&gt;
&lt;BR&gt;
Union Jack&lt;BR&gt;
2/3 jigger Dry Gin&lt;BR&gt;
1/3 jigger Crème d’Yvette&lt;BR&gt;
Stir well in ice and strain into glass.&lt;BR&gt;
&lt;BR&gt;
Expecting A Crowd for Thanksgiving.&lt;BR&gt;
In a large bowl combine 1 quart strong tea with a Bootle each Rum, rye Whiskey and Brandy, ½ bottle Benedictine, 1 tablespoon Angostura Bitters and 1 sliced Pineapple.  Add the juice of 12 Oranges, ½ pound sugar, dissolved I Water, mix together thoroughly.  Add block of ice before serving, pour in 2 quarts of chilled champagne.&lt;BR&gt;

1-cup flour, &lt;BR&gt;
1-teaspoon baking powder &lt;BR&gt;
¼ teaspoon salt,&lt;BR&gt;
¼ teaspoon cinnamon, &lt;BR&gt;
1/3 cup rolled oats, blueberries about ¾ cup, or as much as you want. &lt;BR&gt;
¼ cup brown sugar, &lt;BR&gt;
1 egg, 1 cup milk&lt;BR&gt;
1-tablespoon oil.&lt;BR&gt;
&lt;BR&gt;
Mix together the flour, baking power, salt, cinnamon, rolled oats and brown sugar. Stir well.  Beat together the egg, milk and oil.  Make a well in the dry ingredients and add the egg mixer all at once.  Stir just until moistened and batter is still lumpy. Drop dollops on the grill and add the blues as directed in procedure for pancakes.  Cook pancakes until bubbles form, then flip them and brown on the other side. &lt;BR&gt;
Makes about 8 medium-sizes pancakes.&lt;BR&gt;
&lt;BR&gt;
APPLE SLICE PANCAKES&lt;BR&gt;
1 Granny Smith apple &lt;BR&gt;
1 1/4 cup any type pancake mix &lt;BR&gt;
1/2 teaspoon cinnamon &lt;BR&gt;
1 egg &lt;BR&gt;
2 teaspoons canola oil &lt;BR&gt;
1 cup low-fat milk&lt;BR&gt;
Lightly coat a griddle or skillet with cooking spray and heat over medium heat. &lt;BR&gt;
Peel, core and thinly slice apple into rings.&lt;BR&gt;
In a large mixing bowl, combine ingredients for pancake batter. Stir until ingredients are evenly moist. (Small lumps are ok! Over-mixing makes pancakes tough.) &lt;BR&gt;
For each pancake, place apple ring on griddle and pour about 1/4 cup batter over apple ring, starting in the center and covering the apple. &lt;BR&gt;
 Cook until bubbles appear. Turn and cook other side until lightly brown. &lt;BR&gt;
&lt;BR&gt;
Grandma’s Beef-Stew &amp; Dumplings&lt;BR&gt;
1 pound………………(500 g)…………………stew beef&lt;BR&gt;
3 tablespoons (45 ml)…………………flour&lt;BR&gt;
1 clove of garlic&lt;BR&gt;
salt and pepper to taste&lt;BR&gt;
1 medium size onion, chopped&lt;BR&gt;
3 carrots&lt;BR&gt;
1 turnip, diced&lt;BR&gt;
1 bay leaf&lt;BR&gt;
Cut meat into cubes.  Roll in flour and brown in hot oil.&lt;BR&gt;
Add chopped onion and garlic.  Add salt and pepper to taste.&lt;BR&gt;
Stir until onion is a golden brown.  Add enough water to cover&lt;BR&gt;
the meat.  Bring to a boil.  Simmer gently for 1 ½ -2 hours. &lt;BR&gt;
Add rest of vegetables ½ hour before stew is served.&lt;BR&gt;
&lt;BR&gt;
YIELD: serves 4-6&lt;BR&gt;
TIME: 15 minutes preparation, approx.2 hours to cook&lt;BR&gt;

Dumplings&lt;BR&gt;
2 cups………………………………..(500 ml)………………………all purpose flour&lt;BR&gt;
4 teaspoons…………………….(20 ml)……………………………baking powder&lt;BR&gt;
½ teaspoon…………………………(2,5 ml)……………………….salt&lt;BR&gt;
2 tablespoons…………………(30 ml)……………………………shortening&lt;BR&gt;
¾ cup…………………………………….(185 ml)…………………milk&lt;BR&gt;
Sift flour.  Add baking powder and salt and sift again.&lt;BR&gt;
Cut in the shortening and add milk.  Drop into simmering stew&lt;BR&gt;
gently, being careful to drop a piece of meat or vegetable so&lt;BR&gt;
that it will not be immersed.  Cover the kettle.&lt;BR&gt;
&lt;BR&gt;
Picnic Chicken Salad&lt;BR&gt;
2 1/2 cups cooked, diced chicken breast &lt;BR&gt;
1/2 cup chopped celery &lt;BR&gt;
1/4 cup chopped onion &lt;BR&gt;
2 Tablespoons pickle relish &lt;BR&gt;
1/2 cup light mayonnaise&lt;BR&gt;
&lt;BR&gt;
Combine all ingredients. &lt;BR&gt;
Refrigerate until ready to serve. &lt;BR&gt;
Use within 1-2 days. Chicken salad does not freeze well. &lt;BR&gt;
How to use: &lt;BR&gt;
Make chicken salad sandwiches. &lt;BR&gt;
Make a pasta salad by mixing with 2 cups cooked pasta.&lt;BR&gt;
Serving Size: 1/6 of recipe &lt;BR&gt;
Yield: 6 servings&lt;BR&gt;

GLAZED BERRY TARTS&lt;BR&gt;
3 ½ cups fresh or frozen blueberries (unthawed)&lt;BR&gt;
1/3-cup water&lt;BR&gt;
2/3-cup sugar&lt;BR&gt;
2-tablespoons cornstarch&lt;BR&gt;
a few grains of salt&lt;BR&gt;
1-tablespoon lemon juice&lt;BR&gt;
6 large medium baked tart shells&lt;BR&gt;
(You can double medium baked tart shells)&lt;BR&gt;
&lt;BR&gt;
Crush ½ cup blueberries, add water and bring to a rolling boil. Remove from heat and press through sieve.  In a saucepan, combine sugar, cornstarch and salt.  Add sieved juice (made to ¾ cup with water).  Mix thoroughly and cook, stirring constantly until glaze thickens and becomes clear, about 5 minutes.  Cool slightly, then add lemon juice.  Arrange whole berries in tart shells and spoon glaze over berries.  Chill before serving.&lt;BR&gt;

Lentil Curry (Vegan)&lt;BR&gt;
This is a tasty vegetarian dish.&lt;BR&gt;
Lentils are a good source of fiber, protein and also some iron.&lt;BR&gt;
Serve alone or with a side of brown rice or Indian breads such as chapattis.&lt;BR&gt;
1 cup uncooked brown lentils&lt;BR&gt;
7 cups water&lt;BR&gt;
1 large onion, chopped finely&lt;BR&gt;
2 tbsp vegetable oil&lt;BR&gt;
1, 2-inch piece of ginger root, peeled and chopped&lt;BR&gt;
2 green chilies, chopped (optional)&lt;BR&gt;
1 tbsp coriander powder&lt;BR&gt;
1 tbsp curry powder&lt;BR&gt;
1 tsp chilli powder&lt;BR&gt;
&lt;BR&gt;
Combine the lentils and water in a large pot and bring to a boil. &lt;BR&gt;
Then lower the heat and simmer until the lentils are tender, but not mushy! &lt;BR&gt;
This should take about 20 minutes.&lt;BR&gt;
&lt;BR&gt;
Meanwhile, cook the onion in another pot in the oil for a few minutes on medium/high heat. &lt;BR&gt;
Add the ginger and chilies, cook the mixture until the onion is translucent. &lt;BR&gt;
This should take about 5 to 10 minutes. Stir in the spices and cook for 3 more minutes. &lt;BR&gt;
&lt;BR&gt;
Add the onion mixture to the lentils. &lt;BR&gt;
Cover and simmer for 15 more minutes.&lt;BR&gt;
Serve and enjoy!&lt;BR&gt;
&lt;BR&gt;
Strawberry Banana Treat (VEGAN)&lt;BR&gt;
This is a beautiful dessert, perfect after a hearty meal. &lt;BR&gt;
Serve in champagne glasses or pudding bowls!&lt;BR&gt;
5 very ripe bananas, frozen&lt;BR&gt;
1/2 to 1 cup frozen strawberries (or berry of your choice)&lt;BR&gt;
1 tsp vanilla extract&lt;BR&gt;
¼ to ½ cup soymilk&lt;BR&gt;
Cut the bananas into thick slices.&lt;BR&gt;
Place the fruit, vanilla, and soy milk into a food processor.&lt;BR&gt;
Blend until smooth. Add more milk if needed.&lt;BR&gt;
Serve at once!&lt;BR&gt;
&lt;BR&gt;
Super Easy Pasta Salad (VEGAN)&lt;BR&gt;
Ingredients:&lt;BR&gt;
2 cups whole wheat pasta, cooked &amp; cooled&lt;BR&gt;
2 ripe tomatoes, chopped&lt;BR&gt;
1/2 green pepper, chopped&lt;BR&gt;
1 green onion, thinly sliced &lt;BR&gt;
1/4 cucumber, chopped&lt;BR&gt;
1/2 cup organic sugar&lt;BR&gt;
1/2 cup vegetable oil&lt;BR&gt;
1/3 cup ketchup&lt;BR&gt;
1/4 cup vinegar&lt;BR&gt;
1 teaspoon salt&lt;BR&gt;
1/4 teaspoon pepper&lt;BR&gt;
1 teaspoon paprika&lt;BR&gt;
Directions:&lt;BR&gt;
Mix together the sugar, ketchup, vinegar, oil, salt, pepper and paprika. Pour the dressing over the pasta and veggies, and stir well.&lt;BR&gt;

LIGHTSIDE&lt;BR&gt;

Dr. Donald Low, chair of the council and chief microbiologist at Toronto's Mount Sinai Hospital said hand washing and surface disinfection are two key areas that need greater attention along with food safety, immunization and proper use of antibiotics.&lt;BR&gt;
He said the most &quot;bang for your buck&quot; in prevention from illness at home comes in the kitchen where bacteria and viruses can multiply on moist or hard surfaces.&lt;BR&gt;
&lt;BR&gt;
Low said dishcloths are growing &quot;unsatisfactory&quot; levels of bacteria in nine out of 10 Canadian kitchens and 80 per cent of food-borne illnesses occur at home because food was not handled or cooked properly.&lt;BR&gt;
&lt;BR&gt;
In the past, doctors promoted washing with soap and water but alcohol-based hand rubs are better to use on hands that are not visibly soiled, he said. &quot;They are more effective at actually killing bacteria and viruses,&quot; Low said. &quot;They are easier on your hands so you can do it more often without getting chafing of the skin.&quot;&lt;BR&gt;
&lt;BR&gt;
Food safety Tips When Traveling Or In Case of A Disaster.&lt;BR&gt;
&lt;BR&gt;
If you are traveling with perishable food, place it in a cooler with ice or freezer packs. Have plenty of ice or frozen gel-packs on hand before starting to pack food. If you take meat, poultry, eggs, for eating on the road or to cook at your vacation spot, plan to keep everything on ice in your cooler. &lt;BR&gt;
&lt;BR&gt;
Keep raw meat and poultry wrapped separately from cooked foods, or foods meant to be eaten raw such as fruits.  Limit the times the cooler is opened. Open and close the lid quickly. Pack perishable foods directly from the refrigerator or freezer into the cooler. If the cooler is only partially filled, pack the remaining space with more ice.  Limit the times the cooler is opened. Open and close the lid quickly. &lt;BR&gt;
&lt;BR&gt;
Remember to keep the cooler in a shady spot. Keep it covered with a blanket, tarp or poncho, preferably one that is light in color to reflect heat. &lt;BR&gt;
&lt;BR&gt;
Bring along bottled water or other canned or bottled drinks. Always assume that streams and rivers are not safe for drinking. If camping in a remote area, bring along water purification tablets or equipment. &lt;BR&gt;
&lt;BR&gt;
Don't let perishable food sit out while swimming or fishing. Remember, food sitting out for more than 2 hours is not safe. The time frame is reduced to just 1 hour if the outside temperature is above 90 °F.&lt;BR&gt;
&lt;BR&gt;
If you do fishing and are lucky the big one didn’t get away, gut and clean the fish as soon as they are caught. Wrap both whole and cleaned fish in watertight plastic and store on ice. Keep 3-4 inches of ice on the bottom of the cooler. Alternate layers of fish and ice. After cooking, eat within 3-4 days. Make sure the raw fish stays separate from cooked foods.&lt;BR&gt;
&lt;BR&gt;
Crabs, lobsters and other shellfish must be kept alive until cooked. Store in a bushel or laundry basket under wet burlap. Crabs and lobsters are best eaten the day they are caught. Live oysters can keep 7-10 days.  Mussels and clams, 4-5 days.&lt;BR&gt;
&lt;BR&gt;
Caution: Be aware of the potential dangers of eating raw shellfish. This is especially true for persons with liver disorders or weakened immune systems. Warning, no one should eat raw shellfish.&lt;BR&gt;
&lt;BR&gt;
If you go to the beach take along only the food that can be eaten to avoid having leftovers. If grilling, make sure local ordinances allow it.  Bring the cooler! Partially bury it in the sand, cover with blankets, and shade with a beach umbrella.&lt;BR&gt;
 &lt;BR&gt;
RESPONSIBLE DRINKING &lt;BR&gt;
&lt;BR&gt;
If you have teenagers, or in fact any adult, impress on them the&lt;BR&gt;
risks of driving while intoxicated. Statistics demonstrate drunk&lt;BR&gt;
drivers cause many fatal road accidents. &lt;BR&gt;

It should be known that like any other drug, addiction is a &lt;BR&gt;
potential hazard.  Excess of alcohol will affect organs such as&lt;BR&gt;
the brain, heart, and liver.&lt;BR&gt;

Tequila Gimlet.&lt;BR&gt;
½ ounce limejuice.&lt;BR&gt;
1 ½ ounces tequila.&lt;BR&gt;
Stir with ice cubes.&lt;BR&gt;

Light Rum Drink&lt;BR&gt;
2 ½ ounces light Puerto Rican rum.&lt;BR&gt;
1 ounce lemon juice.&lt;BR&gt;
1 ounce Grenadine.&lt;BR&gt;
Club Soda.&lt;BR&gt;
Stir rum, lemon juice, and grenadine with ice cubes.  Strain into 10-ounce glass with shaved ice.  Fill glass with soda. Serve with straws.&lt;BR&gt;
&lt;BR&gt;
NON- ALCOHOLIC DRINKS&lt;BR&gt;
ORGEAT FIZZ&lt;BR&gt;
1 ½ ounces orgeat syrup&lt;BR&gt;
½ ounce limejuice&lt;BR&gt;
Club Soda&lt;BR&gt;
Shake orgeat and lime juice with ice cubes. Strain into fizz&lt;BR&gt;
Glass.  Add ice cubes. Add soda to glass. Serve with straws.&lt;BR&gt;
&lt;BR&gt;
TEA PUNCH&lt;BR&gt;
3 cups brewed strong black tea&lt;BR&gt;
1 quart orange juice&lt;BR&gt;
1-cup lime or lemon juice&lt;BR&gt;
2 cups raspberry syrup&lt;BR&gt;
1 cup crushed pineapple&lt;BR&gt;
bar sugar to taste&lt;BR&gt;
2 quarts club soda&lt;BR&gt;
Pour all ingredients except soda over a large block of ice in a punch bowl.  Stir well.  Let it chill.  At serving time, add chilled soda.&lt;BR&gt;

1/3 cup rolled oats, blueberries about ¾ cup, or as much as you want. &lt;BR&gt;
¼ cup brown sugar, &lt;BR&gt;
1 egg, 1 cup milk&lt;BR&gt;
1-tablespoon oil.&lt;BR&gt;
&lt;BR&gt;
Mix together the flour, baking power, salt, cinnamon, rolled oats and brown sugar. Stir well.  Beat together the egg, milk and oil.  Make a well in the dry ingredients and add the egg mixer all at once.  Stir just until moistened and batter is still lumpy. Drop dollops on the grill and add the blues as directed in procedure for pancakes.  Cook pancakes until bubbles form, then flip them and brown on the other side. &lt;BR&gt;
Makes about 8 medium-sizes pancakes.&lt;BR&gt;
&lt;BR&gt;
APPLE SLICE PANCAKES&lt;BR&gt;
1 Granny Smith apple &lt;BR&gt;
1 1/4 cup any type pancake mix &lt;BR&gt;
1/2 teaspoon cinnamon &lt;BR&gt;
1 egg &lt;BR&gt;
2 teaspoons canola oil &lt;BR&gt;
1 cup low-fat milk&lt;BR&gt;
Lightly coat a griddle or skillet with cooking spray and heat over medium heat. &lt;BR&gt;
Peel, core and thinly slice apple into rings.&lt;BR&gt;
In a large mixing bowl, combine ingredients for pancake batter. Stir until ingredients are evenly moist. (Small lumps are ok! Over-mixing makes pancakes tough.) &lt;BR&gt;
For each pancake, place apple ring on griddle and pour about 1/4 cup batter over apple ring, starting in the center and covering the apple. &lt;BR&gt;
 Cook until bubbles appear. Turn and cook other side until lightly brown. &lt;BR&gt;
&lt;BR&gt;
Grandma’s Beef-Stew &amp; Dumplings&lt;BR&gt;
1 pound………………(500 g)…………………stew beef&lt;BR&gt;
3 tablespoons(45 ml)…………………flour&lt;BR&gt;
1 clove of garlic&lt;BR&gt;
salt and pepper to taste&lt;BR&gt;
1 medium size onion, chopped&lt;BR&gt;
3 carrots&lt;BR&gt;
1 turnip, diced&lt;BR&gt;
1 bay leaf&lt;BR&gt;
Cut meat into cubes.  Roll in flour and brown in hot oil.&lt;BR&gt;
Add chopped onion and garlic.  Add salt and pepper to taste.&lt;BR&gt;
Stir until onion is a golden brown.  Add enough water to cover&lt;BR&gt;
the meat.  Bring to a boil.  Simmer gently for 1 ½ -2 hours. &lt;BR&gt;
Add rest of vegetables ½ hour before stew is served.&lt;BR&gt;
&lt;BR&gt;
YIELD: serves 4-6&lt;BR&gt;
TIME: 15 minutes preparation, approx.2 hours to cook&lt;BR&gt;
&lt;BR&gt;
Dumplings&lt;BR&gt;
2 cups………………………………..(500 ml)………………………all purpose flour&lt;BR&gt;
4 teaspoons…………………….(20 ml)……………………………baking powder&lt;BR&gt;
½ teaspoon…………………………(2,5 ml)……………………….salt&lt;BR&gt;
2 tablespoons…………………(30 ml)……………………………shortening&lt;BR&gt;
¾ cup…………………………………….(185 ml)…………………milk&lt;BR&gt;
Sift flour.  Add baking powder and salt and sift again.&lt;BR&gt;
Cut in the shortening and add milk.  Drop into simmering stew&lt;BR&gt;
gently, being careful to drop a piece of meat or vegetable so&lt;BR&gt;
that it will not be immersed.  Cover the kettle.&lt;BR&gt;
&lt;BR&gt;
Picnic Chicken Salad&lt;BR&gt;
2 1/2 cups cooked, diced chicken breast &lt;BR&gt;
1/2 cup chopped celery &lt;BR&gt;
1/4 cup chopped onion &lt;BR&gt;
2 Tablespoons pickle relish &lt;BR&gt;
1/2 cup light mayonnaise&lt;BR&gt;
&lt;BR&gt;
Combine all ingredients. &lt;BR&gt;
Refrigerate until ready to serve. &lt;BR&gt;
Use within 1-2 days. Chicken salad does not freeze well. &lt;BR&gt;
How to use: &lt;BR&gt;
Make chicken salad sandwiches. &lt;BR&gt;
Make a pasta salad by mixing with 2 cups cooked pasta.&lt;BR&gt;
Serving Size: 1/6 of recipe &lt;BR&gt;
Yield: 6 servings&lt;BR&gt;

GLAZED BERRY TARTS&lt;BR&gt;
3 ½ cups fresh or frozen blueberries (unthawed)&lt;BR&gt;
1/3-cup water&lt;BR&gt;
2/3-cup sugar&lt;BR&gt;
2-tablespoons cornstarch&lt;BR&gt;
a few grains of salt&lt;BR&gt;
1-tablespoon lemon juice&lt;BR&gt;
6 large medium baked tart shells&lt;BR&gt;
(You can double medium baked tart shells)&lt;BR&gt;
&lt;BR&gt;
Crush ½ cup blueberries, add water and bring to a rolling boil. Remove from heat and press through sieve.  In a saucepan, combine sugar, cornstarch and salt.  Add sieved juice (made to ¾ cup with water).  Mix thoroughly and cook, stirring constantly until glaze thickens and becomes clear, about 5 minutes.  Cool slightly, then add lemon juice.  Arrange whole berries in tart shells and spoon glaze over berries.  Chill before serving.&lt;BR&gt;

4 cups medium sweet potatoes peeled and finely chopped.&lt;BR&gt;

½ cup raisins.&lt;BR&gt;
1 teaspoon cinnamon.&lt;BR&gt;
1 cup apple juice.&lt;BR&gt;
½ cup bread crumbs.&lt;BR&gt;
½ cup walnuts.&lt;BR&gt;
Preheat oven to 375F in a large casserole dish, mix together all the ingredients.  Bake uncovered for 45-50 minutes.  Makes 4-6 servings&lt;BR&gt;

Directions:&lt;BR&gt;
&lt;BR&gt;
Combine all dry ingredients (flour, salt, vegan sugar, baking powder, nutmeg). Combine wet ingredients in a separate bowl.  Mix wet and dry ingredients, but don't over-stir.  Pour onto hot skillet, flip once.  Makes 6 medium pancakes.&lt;BR&gt;

Note: You may also add fresh fruit such as blueberries or vegan chocolate chips for some variety!&lt;BR&gt;

Super Easy Vegan Pasta Salad&lt;BR&gt;
Ingredients:&lt;BR&gt;
2 cups whole wheat pasta, cooked &amp; cooled&lt;BR&gt;
2 ripe tomatoes, chopped&lt;BR&gt;
1/2 green pepper, chopped&lt;BR&gt;
1 green onion, thinly sliced &lt;BR&gt;
1/4 cucumber, chopped&lt;BR&gt;
1/2 cup organic sugar&lt;BR&gt;
1/2 cup vegetable oil&lt;BR&gt;
1/3 cup ketchup&lt;BR&gt;
1/4 cup vinegar&lt;BR&gt;
1 teaspoon salt&lt;BR&gt;
1/4 teaspoon pepper&lt;BR&gt;
1 teaspoon paprika&lt;BR&gt;
Directions:&lt;BR&gt;
Mix together the sugar, ketchup, vinegar, oil, salt, pepper and paprika. Pour the dressing over the pasta and veggies, and stir well.&lt;BR&gt;

Dr. Donald Low, chair of the council and chief microbiologist at Toronto's Mount Sinai Hospital said hand washing and surface disinfection are two key areas that need greater attention along with food safety, immunization and proper use of antibiotics.&lt;BR&gt;
He said the most &quot;bang for your buck&quot; in prevention from illness at home comes in the kitchen where bacteria and viruses can multiply on moist or hard surfaces.&lt;BR&gt;
Low said dishcloths are growing &quot;unsatisfactory&quot; levels of bacteria in nine out of 10 Canadian kitchens and 80 per cent of food-borne illnesses occur at home because food was not handled or cooked properly.&lt;BR&gt;
&lt;BR&gt;
In the past, doctors promoted washing with soap and water but alcohol-based hand rubs are better to use on hands that are not visibly soiled, he said. &quot;They are more effective at actually killing bacteria and viruses,&quot; Low said. &quot;They are easier on your hands so you can do it more often without getting chafing of the skin.&quot;&lt;BR&gt;
&lt;BR&gt;
Food Safety Tips When Traveling Or In Case of A Disaster.&lt;BR&gt;
&lt;BR&gt;
If you are traveling with perishable food, place it in a cooler with ice or freezer packs. Have plenty of ice or frozen gel-packs on hand before starting to pack food. If you take meat, poultry, eggs, for eating on the road or to cook at your vacation spot, plan to keep everything on ice in your cooler. &lt;BR&gt;
&lt;BR&gt;
Keep raw meat and poultry wrapped separately from cooked foods, or foods meant to be eaten raw such as fruits.  Limit the times the cooler is opened. Open and close the lid quickly. Pack perishable foods directly from the refrigerator or freezer into the cooler. If the cooler is only partially filled, pack the remaining space with more ice.  Limit the times the cooler is opened. Open and close the lid quickly. &lt;BR&gt;
&lt;BR&gt;
Remember to keep the cooler in a shady spot. Keep it covered with a blanket, tarp or poncho, preferably one that is light in color to reflect heat. &lt;BR&gt;
&lt;BR&gt;
Bring along bottled water or other canned or bottled drinks. Always assume that streams and rivers are not safe for drinking. If camping in a remote area, bring along water purification tablets or equipment. &lt;BR&gt;
&lt;BR&gt;
Don't let perishable food sit out while swimming or fishing. Remember, food sitting out for more than 2 hours is not safe. The time frame is reduced to just 1 hour if the outside temperature is above 90 °F.&lt;BR&gt;
&lt;BR&gt;
If you do fishing and are lucky the big one didn’t get away, gut and clean the fish as soon as they are caught. Wrap both whole and cleaned fish in watertight plastic and store on ice. Keep 3-4 inches of ice on the bottom of the cooler. Alternate layers of fish and ice. After cooking, eat within 3-4 days. Make sure the raw fish stays separate from cooked foods.&lt;BR&gt;
&lt;BR&gt;
Crabs, lobsters and other shellfish must be kept alive until cooked. Store in a bushel or laundry basket under wet burlap. Crabs and lobsters are best eaten the day they are caught. Live oysters can keep 7-10 days.  Mussels and clams, 4-5 days.&lt;BR&gt;
&lt;BR&gt;
Caution: Be aware of the potential dangers of eating raw shellfish. This is especially true for persons with liver disorders or weakened immune systems. Warning, no one should eat raw shellfish.&lt;BR&gt;
&lt;BR&gt;
If you go to the beach take along only the food that can be eaten to avoid having leftovers. If grilling, make sure local ordinances allow it.  Bring the cooler! Partially bury it in the sand, cover with blankets, and shade with a beach umbrella.&lt;BR&gt;
 &lt;BR&gt;
RESPONSIBLE DRINKING &lt;BR&gt;
&lt;BR&gt;
If you have teenagers, or in fact any adult, impress on them the&lt;BR&gt;
risks of driving while intoxicated. Statistics demonstrate drunk&lt;BR&gt;
drivers cause many fatal road accidents. &lt;BR&gt;
&lt;BR&gt;
It should be known that like any other drug, addiction is a &lt;BR&gt;
potential hazard.  Excess of alcohol will affect organs such as&lt;BR&gt;
the brain, heart, and liver.&lt;BR&gt;
&lt;BR&gt;
BAR MIXES&lt;BR&gt;
Tequila Gimlet.&lt;BR&gt;
½ ounce limejuice.&lt;BR&gt;
1 ½ ounces tequila.&lt;BR&gt;
Stir with ice cubes.&lt;BR&gt;
&lt;BR&gt;
Light Rum Drink&lt;BR&gt;
2 ½ ounces light Puerto Rican rum.&lt;BR&gt;
1 ounce lemon juice.&lt;BR&gt;
1 ounce Grenadine.&lt;BR&gt;
Club Soda.&lt;BR&gt;
Stir rum, lemon juice, and grenadine with ice cubes.  &lt;BR&gt;
Strain into 10-ounce glass with shaved ice.  &lt;BR&gt;
Fill glass with soda. Serve with straws.&lt;BR&gt;
&lt;BR&gt;
NON- ALCOHOLIC DRINKS&lt;BR&gt;
ORGEAT FIZZ&lt;BR&gt;
1 ½ ounces orgeat syrup&lt;BR&gt;
½ ounce limejuice&lt;BR&gt;
Club Soda&lt;BR&gt;
Shake orgeat and lime juice with ice cubes. Strain into fizz&lt;BR&gt;
Glass.  Add ice cubes. Add soda to glass. Serve with straws.&lt;BR&gt;
&lt;BR&gt;
TEA PUNCH&lt;BR&gt;
3 cups brewed strong black tea&lt;BR&gt;
1 quart orange juice&lt;BR&gt;
1-cup lime or lemon juice&lt;BR&gt;
2 cups raspberry syrup&lt;BR&gt;
1 cup crushed pineapple&lt;BR&gt;
bar sugar to taste&lt;BR&gt;
2 quarts club soda&lt;BR&gt;
Pour all ingredients except soda over a large block of ice in a punch bowl.  Stir well.  Let it chill.  At serving time, add chilled soda.&lt;BR&gt;

PREHEAT oven to 400 degrees F. Melt butter in medium saucepan on medium heat. Add zucchini and onion; cook and stir 2 min. or until well blended. &lt;BR&gt;

CAREFULLY insert fingers between the meat and skin of each chicken quarter to form a pocket. Fill pockets evenly with stuffing mixture. Place, skin sides up, in large roasting pan. &lt;BR&gt;
&lt;BR&gt;
BAKE 45 min. or until chicken is cooked through. Brush with barbecue sauce. Bake an additional 5 to 10 min.or until heated though.   YIELDS: 8 servings&lt;BR&gt;
&lt;BR&gt;
GRANDMA'S BAKED HAM AND APPLES &lt;BR&gt;
2 large slices of ham steak. &lt;BR&gt;
2 teaspoons..(10 ml).prepared mustard. &lt;BR&gt;
4 tablespoons.(60 ml)brown sugar. &lt;BR&gt;
2 tart apples. &lt;BR&gt;
1 cup (375 ml)apple juice. &lt;BR&gt;
Place the ham in baking dish and rub with mustard. Sprinkle &lt;BR&gt;
with 2 tablespoons (30 ml), of brown sugar. Core the apple &lt;BR&gt;
and cut into thin slices. Cover the ham with the apple slices &lt;BR&gt;
and sprinkle with rest of brown sugar. Add apple juice. Bake &lt;BR&gt;
at 300 F, (150 C), for 30 minutes or until tender. &lt;BR&gt;
&lt;BR&gt;
YIELD: 4-5 servings. &lt;BR&gt;
TIME: 40 minutes.&lt;BR&gt;
GRANDMA&quot;S SHORTBREAD &lt;BR&gt;
1-cup butter &lt;BR&gt;
2 cups all-purpose flour &lt;BR&gt;
cup fruit sugar &lt;BR&gt;
In a large bowl, cream the butter. &lt;BR&gt;
Add sugar to creamed butter and cream the mixture together. &lt;BR&gt;
Slowly mix in 1- cups of the flour. &lt;BR&gt;
&lt;BR&gt;
Place mixture on clean surface and knead in the remaining flour. &lt;BR&gt;
Spread mixture in an 8 x 8-inch baking pan. Alternatively, you can form them into 2 big cookies, each inch thick, and place on a non-stick baking tray. Using a fork, punch holes all over mixture. Bake at 300F for 40-45 minutes.&lt;BR&gt;

You want to try veggie burgers; they are great imitations of the real thing. Many companies now make them in a variety of tastes and styles. Some mimic meat; others are intentionally grain like. All are lower in calories and fat than a conventional burger and higher in fibre. Many have a respectable amount of protein, too. Their weakness is sodium: The rated burgers have 250 to 500 milligrams. (The recommended daily limit is 2,300 milligrams)&lt;BR&gt;
&lt;BR&gt;
BUGER VEGGIE, Calories 110, Fat (4g), Protein (10g), Sodium 360(mg).&lt;BR&gt;
BEEF VEGGIE, Calories 177, Protein 17(g), Fat 11(g), Sodium 360.&lt;BR&gt;
&lt;BR&gt;
ENGLISH MUFFIN VEGGIE PIZZA&lt;BR&gt;
1 cup cooked chopped broccoli. &lt;BR&gt;
4 whole (8 halves) English muffins. &lt;BR&gt;
1-cup pizza sauce (or spaghetti sauce). &lt;BR&gt;
1/2-cup mozzarella cheese, shredded, part skim. &lt;BR&gt;
3 Tablespoons shredded carrots. &lt;BR&gt;
1 teaspoon grated parmesan cheese.&lt;BR&gt;
Cut the broccoli to make 1 cup of chopped broccoli. &lt;BR&gt;
Put the broccoli in a saucepan with water. Cook on medium until tender. &lt;BR&gt;
Drain the water from the saucepan. Let the broccoli cool. &lt;BR&gt;
Cut 4 English muffins in half. Toast the 8 muffin halves. &lt;BR&gt;
Shred the mozzarella cheese to make ½ cup of shredded cheese.&lt;BR&gt;
Peel and shred the carrots to make 3 tablespoons shredded carrots. &lt;BR&gt;
Spoon 2 tablespoons pizza sauces over each English muffin half. &lt;BR&gt;
Sprinkle 1 tablespoon shredded mozzarella cheeses on top of each half. &lt;BR&gt;
Put 2 tablespoons broccoli and 1 teaspoon shredded carrots on top of each half. &lt;BR&gt;
Sprinkle each half with 1 teaspoon grated Parmesan cheese. &lt;BR&gt;
Toast in the toaster oven for 2 minutes, until the cheese melts.&lt;BR&gt;
Serving Size: 2 pizzas (each made from 1/2 English muffin) &lt;BR&gt;
Yield: 4 servings.&lt;BR&gt;

FOOD INFORMATION, Go Mediterranean &lt;BR&gt;
Dietary choices for maintaining cognitive wellbeing may seem obvious, because they are often the same choices that ward off other diseases, such as cardiovascular disease and cancer. The optimal ratio of lean protein (particularly from fish), legumes, fruits, vegetables and monounsaturated fat, mostly in the form of olive oil, makes up what is popularly termed the Mediterranean diet. Other characteristics of this way of eating include low consumption of dairy foods, red meat and eggs.&lt;BR&gt;
 &lt;BR&gt;
Specifically, the study found that eating lots of foods that are easily converted to energy, along with protein, increases the ingestion of vitamins D, B2, B6 and a host of other important B vitamins (J Nutri Sci Vitaminol 2004;50:184-95). B vitamins have long been associated with cognitive function. You can find plenty of B vitamins in foods like salmon, beef, eggs, peanuts, broccoli, asparagus, red peppers, spinach and romaine lettuce.&lt;BR&gt;
 &lt;BR&gt;
Another supplement to consider is beta-carotene - the pigment that makes carrots orange. Many types of fish contain large amounts of important fats known as omega-3 fatty acids. Scores of reports show that omega-3s can maintain brain health effectively, and even prevent dementia. &lt;BR&gt;
&lt;BR&gt;
One note of caution: Due to water pollution, many fish contain high levels of toxins and heavy metals, such as mercury and PCBs, which affect brain health. &lt;BR&gt;
Larger, longer-lived species are most susceptible to contamination. Whenever possible, avoid swordfish, tilefish, shark, snapper and king mackerel, all of which are known to have high levels of mercury.&lt;BR&gt;

To avoid potential cross-contamination and the spread of food borne illness, follow these steps: &lt;BR&gt;
&lt;BR&gt;
Make sure to keep raw meat away from other foods, including vegetables such as lettuce and tomatoes. You can do this by packing meats separately or by making sure they are wrapped separately, so that juices don't leak out onto other foods. &lt;BR&gt;
&lt;BR&gt;
Wash your hands carefully with soap and warm water for at least 20 seconds before and after handling raw meat. &lt;BR&gt;
&lt;BR&gt;
Clean all your cooking equipment, utensils and work surfaces, and then sanitize them with a mild bleach solution, in the following manner: &lt;BR&gt;
&lt;BR&gt;
Combine 5 mL (1 tsp) of bleach with 750 mL (3 cups) of water in a labelled spray bottle. &lt;BR&gt;
&lt;BR&gt;
Spray the bleach solution on the surface/utensil and let stand briefly. &lt;BR&gt;
&lt;BR&gt;
Rinse with lots of clean water and air dry (or use clean towels). &lt;BR&gt;
&lt;BR&gt;
Thawing should be done in the refrigerator. Sealed packages can be thawed in cold water. Microwave defrosting is acceptable if the food item is placed immediately on the grill. Meat should be completely thawed before grilling so that it cooks more evenly.&lt;BR&gt;
&lt;BR&gt;
Allergic reactions&lt;BR&gt;
Allergic reactions are severe adverse reactions that occur when the body's immune system overreacts to a particular allergen. These reactions may be caused by food, insect stings, latex, medications and other substances. &lt;BR&gt;

Nine priority food allergens are peanuts, tree nuts, sesame seeds, milk, eggs, seafood (fish, crustaceans and shellfish), soy, wheat and sulphites.&lt;BR&gt;
&lt;BR&gt;
What are the symptoms of an allergic reaction?&lt;BR&gt;
The symptoms of a reaction may develop quickly and rapidly progress from mild to severe. The most severe form of an allergic reaction is called anaphylaxis. Symptoms can include breathing difficulties, a drop in blood pressure or shock, which may result in loss of consciousness and even death.&lt;BR&gt;
&lt;BR&gt;
Check for the following symptoms:&lt;BR&gt;
Flushed face, hives or a rash, red and itchy skin. &lt;BR&gt;
Swelling of the eyes, face, lips, throat and tongue. &lt;BR&gt;

If you or anyone you are with has symptoms of allergic reaction, do not wait, phone 911.&lt;BR&gt;

RESPONSIBLE DRINKING &lt;BR&gt;
If you have teenagers, or in fact any adult, impress on them &lt;BR&gt;
the risks of driving while intoxicated. Statistics demonstrate &lt;BR&gt;

General rules.&lt;BR&gt;
&lt;BR&gt;
TENDER CUTS of meat can be cooked by dry heat, as in broiling, pan-broiling, or roasting.&lt;BR&gt;
&lt;BR&gt;
TOUGH CUTS can only be made tender by moist heat, as in pot roasting and Stewing.&lt;BR&gt;
&lt;BR&gt;
Our main object is to prevent shrinkage in so far as possible, and produce a tender, juicy, tasty product. In roasting, searing does little to help keep in juices, less shrinkage results at a lower temperature for a longer time (300 F). Searing however makes the meat look attractive and the outside layers taste better.&lt;BR&gt;
&lt;BR&gt;
An uncovered pan with a rack in the bottom gives the best results in roasting.  Cooking time varies with preference.&lt;BR&gt;
For rare meat, 16 minutes per pound.&lt;BR&gt;
For medium meat, 22 minutes per pound.&lt;BR&gt;
For well done meat, 30 minutes per pound.&lt;BR&gt;
&lt;BR&gt;
Add salt during or after cooking, not before.  The salt flavour does not penetrate more then 1 inch. If the meat does not reach the desired colour during roasting, increase the heat to (500 F) for a few minutes before removing from the pan.&lt;BR&gt;
&lt;BR&gt;
Methods of searing is subjecting the meat to a high temperature until it is nicely browned.&lt;BR&gt;
&lt;BR&gt;
By Browing in an uncovered pan in a hot oven (450 F-500F).&lt;BR&gt;
By Browing in hot fat in a frying pan on the surface burner.&lt;BR&gt;
By Adding boiling water and cooking at boiling temperature until the outside of the meat has lost its red colour.&lt;BR&gt;
&lt;BR&gt;

To soften the connective tissue when present in large quantity.&lt;BR&gt;
To kill any living organisms that may be present.&lt;BR&gt;

½ cup………………….(125 ml)…………………chopped parsley.&lt;BR&gt;
1 ½ teaspoon. (7.5ml)……………………oregano or sage&lt;BR&gt;
1 teaspoon………(5 ml)………………………salt&lt;BR&gt;
¼ teaspoon………(1.25 ml)………………thyme&lt;BR&gt;
1 bay leaf&lt;BR&gt;

2 cloves garlic&lt;BR&gt;
&lt;BR&gt;
In a large skillet, cook onion in hot oil until tender.  Add&lt;BR&gt;
Meat and garlic, brown lightly.  Add remaining ingredients.&lt;BR&gt;
Simmer uncovered 1 ½-2 hours or until sauce is nice and thick.&lt;BR&gt;
Stir occasionally.  Remove Bay leaf.  Serve hot over spaghetti.&lt;BR&gt;
Top with Parmesan cheese.&lt;BR&gt;
YIELD:  6 servings.&lt;BR&gt;
Time:  2 ½ hours.&lt;BR&gt;
&lt;BR&gt;
OVEN ROAST.&lt;BR&gt;
Prepare meat as in general cooking rules above.&lt;BR&gt;
Place on a rack in dripping-pan and dredge meat.&lt;BR&gt;
Follow general rules for roasting. Serve with brown gravy.&lt;BR&gt;
&lt;BR&gt;
Brown Gravy.&lt;BR&gt;
Estimate fat in pan.&lt;BR&gt;
Add the same quantity of flour with seasoning to taste.&lt;BR&gt;
Add boiling water to make the consistency of medium white sauce.&lt;BR&gt;
Cook until no taste of raw starch.&lt;BR&gt;
Season with salt and pepper.&lt;BR&gt;
&lt;BR&gt;
APPLE PIE&lt;BR&gt;
4-5 apples.&lt;BR&gt;
1/3 –1/2 cup sugar.&lt;BR&gt;
1/8 teaspoon salt.&lt;BR&gt;
¼ teaspoon cinnamon or nutmeg.&lt;BR&gt;
2 table spoons water if apples need it.&lt;BR&gt;
Wash, pare, and slice the apples.&lt;BR&gt;
Line the pie plate with pastry and fill with sliced apples.&lt;BR&gt;
Mix sugar, salt, and spices, and sprinkle over the apples.&lt;BR&gt;
Cover with upper crust.&lt;BR&gt;
&lt;BR&gt;
DEEP APPLE PIE (ENGLISH)&lt;BR&gt;
Use same ingredients as above, omitting crust.&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S FRENCH DRESSING&lt;BR&gt;
1 teaspoon …………(5 ml)…………sugar&lt;BR&gt;
2 teaspoons………..(10 ml)………..salt&lt;BR&gt;
½ teaspoon………..(2.5 ml)………...pepper&lt;BR&gt;
½ teaspoon ……….(2.5 ml)………...paprika&lt;BR&gt;
1 ½  cup……………(375 ml)……….salad oil&lt;BR&gt;
½ cup………………(125 ml)……….vinegar&lt;BR&gt;
1 clove of garlic (if desired)&lt;BR&gt;
Put sugar, salt, pepper and paprika in jar.  Add oil, vinegar and&lt;BR&gt;
garlic.  Shake well.  When dressing is thoroughly blended, pour&lt;BR&gt;
over salad.&lt;BR&gt;
YIELD:  approximately 2 cups (500 ml)&lt;BR&gt;
CALORIES: 92 per tablespoon (15 ml)&lt;BR&gt;
TIME: 10 minutes&lt;BR&gt;

Beef And Potato Cakes&lt;BR&gt;
You can use ground meat if desired. A treat for children. &lt;BR&gt;
8 oz. Beef. &lt;BR&gt;
8 oz. Potatoes. &lt;BR&gt;
1 small 2-3 inch onion chopped finely. &lt;BR&gt;
1 egg yolk. &lt;BR&gt;
Dark soy sauce. &lt;BR&gt;
1 teaspoon salt.&lt;BR&gt;
Cook the potatoes and mash. Mix in egg yolk and salt. Chop onion finely, brown with 1 tablespoon oil, add ground meat. Brown for 4 minutes. Add soy sauce and mix the batch with the potatoes. Shape into balls the size of golf balls, flatten into cakes. Heat the cooking pan. Grease lightly with oil, use medium heat to brown the cakes, turn to brown both sides. If you have a electric skillet set temperature at 340. When automatic control light blinks, turn cakes over.&lt;BR&gt;
&lt;BR&gt;
MASHED POTATOES&lt;BR&gt;
6 boiled potatoes. &lt;BR&gt;
2 tablespoons butter. &lt;BR&gt;
4 tablespoons hot milk. &lt;BR&gt;
½ teaspoon salt.&lt;BR&gt;
Mash the cooked potatoes with a potato-masher until soft; add the butter, salt, pepper, and milk, and beat all until light and fluffy. Pile lightly in a hot serving-dish.&lt;BR&gt;
&lt;BR&gt;
BAKED POTATOES&lt;BR&gt;
Select smooth, medium-sized potatoes. Wash well with brush. Bake in a hot oven 45 minutes, or until done. Break the skins to let the steam escape and serve at once. If baked potatoes stand they become soggy.&lt;BR&gt;
&lt;BR&gt;
VEGETABLE SOUP (Borsch)&lt;BR&gt;
2 pounds beef, with soup bone. &lt;BR&gt;
2 carrots. &lt;BR&gt;
1 medium head of cabbage. &lt;BR&gt;
2 average-sized onions. &lt;BR&gt;
6 average-sized potatoes. &lt;BR&gt;
2 cups canned tomatoes. &lt;BR&gt;
6 whole pepper kernels. &lt;BR&gt;
1 bay leaf. &lt;BR&gt;
A few sprigs of dill. &lt;BR&gt;
½ cup chopped beets.&lt;BR&gt;
Cover meat with cool water and bring to a boil. Let simmer until almost tender. Add water if necessary to keep meat covered. One hour before serving, add chopped vegetables and seasoning. Potatoes may be cooked separately before serving. When ready to serve, remove from heat and add sour cream.&lt;BR&gt;
&lt;BR&gt;
VAGAN RECIPES&lt;BR&gt;
Simple Green Salad with Avocado and Pear.&lt;BR&gt;
&lt;BR&gt;
This is a simple and delicious salad filled with nutrients.&lt;BR&gt;
Try lemon juice, balsamic vinegar or your favourite vinaigrette as a dressing.&lt;BR&gt;
&lt;BR&gt;
Ingredients:&lt;BR&gt;
1 pear, chopped&lt;BR&gt;
1 avocado, diced&lt;BR&gt;
½ cucumber, sliced&lt;BR&gt;
4 cups chopped romaine lettuce&lt;BR&gt;
Combine the ingredients in a bowl and toss gently. Easy!&lt;BR&gt;
&lt;BR&gt;
Lentil Curry&lt;BR&gt;
This is a tasty vegetarian dish.&lt;BR&gt;
Lentils are a good source of fibre, protein and also some iron.&lt;BR&gt;
Serve alone or with a side of brown rice or Indian breads such as chapattis.&lt;BR&gt;
&lt;BR&gt;
Ingredients:&lt;BR&gt;
&lt;BR&gt;
1 cup uncooked brown lentils&lt;BR&gt;
7 cups water&lt;BR&gt;
1 large onion, chopped finely&lt;BR&gt;
2 tbsp vegetable oil&lt;BR&gt;
1, 2-inch piece of ginger root, peeled and chopped&lt;BR&gt;
2 green chillies, chopped (optional)&lt;BR&gt;
1 tbsp coriander powder&lt;BR&gt;
1 tbsp curry powder&lt;BR&gt;
1 tsp chilli powder&lt;BR&gt;
&lt;BR&gt;
Combine the lentils and water in a large pot and bring to a boil. &lt;BR&gt;
Then lower the heat and simmer until the lentils are tender, but not mushy! &lt;BR&gt;
This should take about 20 minutes.&lt;BR&gt;
&lt;BR&gt;
Meanwhile, cook the onion in another pot in the oil for a few minutes on medium/high heat. &lt;BR&gt;
Add the ginger and chillies; cook the mixture until the onion is translucent. &lt;BR&gt;
This should take about 5 to 10 minutes. Stir in the spices and cook for 3 more minutes. &lt;BR&gt;
&lt;BR&gt;
Add the onion mixture to the lentils. &lt;BR&gt;
Cover and simmer for 15 more minutes.&lt;BR&gt;
Serve and enjoy!&lt;BR&gt;
&lt;BR&gt;
&lt;BR&gt;
Strawberry Banana Treat&lt;BR&gt;
&lt;BR&gt;
This is a beautiful dessert, perfect after a hearty meal. &lt;BR&gt;
Serve in champagne glasses or pudding bowls!&lt;BR&gt;
&lt;BR&gt;
Ingredients:&lt;BR&gt;
&lt;BR&gt;
5 very ripe bananas, frozen&lt;BR&gt;
1/2 to 1 cup frozen strawberries (or berry of your choice)&lt;BR&gt;
1 tsp vanilla extract&lt;BR&gt;
¼ to ½ cup soymilk&lt;BR&gt;
&lt;BR&gt;
Cut the bananas into thick slices.&lt;BR&gt;
Place the fruit, vanilla, and soymilk into a food processor.&lt;BR&gt;
Blend until smooth. Add more milk if needed.&lt;BR&gt;
Serve at once!&lt;BR&gt;
Sweet Potato And Apple Delight&lt;BR&gt;
4 cups medium sweet potatoes peeled and finely chopped.&lt;BR&gt;
2 green apples, cored, thinly sliced.&lt;BR&gt;
½ cup raisins.&lt;BR&gt;
1 teaspoon cinnamon.&lt;BR&gt;
1 cup apple juice.&lt;BR&gt;
½ cup bread crumbs.&lt;BR&gt;
½ cup walnuts.&lt;BR&gt;
Preheat oven to 375F in a large casserole dish, mix together all the ingredients.  Bake uncovered for 45-50 minutes.  Makes 4-6 servings&lt;BR&gt;
&lt;BR&gt;
FOOD TIPS, INFORMATION&lt;BR&gt;
One of the best vegetables you can eat is a sweet potato. They are loaded with vitamin A, carotenoids, vitamin C, potassium and fibre. You can bake and then mix in crushed pineapple for sweetness.&lt;BR&gt;
&lt;BR&gt;
Tomatoes are also packed with vitamin A, fibre.&lt;BR&gt;
&lt;BR&gt;
Wild salmon is great for your health. Salmon that is caught wild has less PCB then farmed salmon. Salmon is high in heart healthy omega-3 fatty acids. Smoking or pickling salmon reduces the amount by about 75%.&lt;BR&gt;
&lt;BR&gt;
Conventionally grown produce is coated with tiny amounts of pesticide residues. Apples, bell peppers, cucumbers, Peaches, pears could be trapped under a layer of wax. &lt;BR&gt;
&lt;BR&gt;
For safety, more so with children and older persons, you should scrub them in a highly diluted solution of liquid dish detergent, which removes most of the pesticides and wax. Or you could peel it, especially apples, peaches, and pears. Organic produce should still be washed to remove other contaminants.&lt;BR&gt;
&lt;BR&gt;
Beans are inexpensive, low in fat, rich in protein, iron, folic and fibre.&lt;BR&gt;
&lt;BR&gt;
Bananas contain vitamin B6, vitamin C, and potassium.&lt;BR&gt;

shaker can with mixing glass) with ice cubes.  Strain into fizz glass. &lt;BR&gt;
Sprinkle with grated orange peel.&lt;BR&gt;
&lt;BR&gt;
Non-Alcoholic&lt;BR&gt;
&lt;BR&gt;
Fresh Fruit Punch&lt;BR&gt;
8 ounces apiece of orange juice, pineapple juice, and grapefruit juice.&lt;BR&gt;
1 bottle ginger ale.  Sugar to taste.&lt;BR&gt;

10 ounces water; stir to blend.  Add chunks of ice before serving.&lt;BR&gt;

Apple Slice Pancakes&lt;BR&gt;
1 Granny Smith apple &lt;BR&gt;
1 1/4 cup any type pancake mix &lt;BR&gt;
1/2 teaspoon cinnamon &lt;BR&gt;
1 egg &lt;BR&gt;
2 teaspoons canola oil &lt;BR&gt;
1 cup low-fat milk&lt;BR&gt;
Lightly coat a griddle or skillet with cooking spray and heat over medium heat.&lt;BR&gt;
Peel, core and thinly slice apple into rings.&lt;BR&gt;
In a large mixing bowl, combine ingredients for pancake batter. Stir until ingredients are evenly moist.&lt;BR&gt;
For each pancake, place apple ring on griddle and pour about 1/4 cup batter over apple ring, starting in the center and covering the apple.&lt;BR&gt;
Cook until bubbles appear. Turn and cook other side until lightly brown.&lt;BR&gt;
Serving Size: 2 pancakes &lt;BR&gt;
Yield: 6 servings.&lt;BR&gt;
&lt;BR&gt;
Baked Chicken, Vegetables&lt;BR&gt;
4 sliced potatoes &lt;BR&gt;
6 sliced carrots &lt;BR&gt;
1 large quartered onion &lt;BR&gt;
1 raw chicken - cleaned and cut into pieces, skin removed &lt;BR&gt;
1/2 cup water &lt;BR&gt;
1 teaspoon thyme &lt;BR&gt;
1/4 teaspoon pepper&lt;BR&gt;
&lt;BR&gt;
Preheat oven to 400 degrees. &lt;BR&gt;
Place potatoes, carrots and onions in a large roasting pan. &lt;BR&gt;
Put chicken pieces on top of the vegetables. &lt;BR&gt;
Mix water, thyme and pepper. Pour over chicken and vegetables. &lt;BR&gt;
Spoon juices over chicken once or twice during cooking. &lt;BR&gt;
Bake at 400 degrees for one hour or more until browned and tender.&lt;BR&gt;
&lt;BR&gt;
SAUCY FISH AND PEAS&lt;BR&gt;
(serves 1 person) a complete meal. &lt;BR&gt;
1 ½ tsp. Margarine.&lt;BR&gt;
1 ½  tsp. Flour.&lt;BR&gt;
Dash of salt, pepper.&lt;BR&gt;
¼ cup powdered skim milk.&lt;BR&gt;
½ cup canned peas, drained.&lt;BR&gt;
½ cup liquid from drained peas.&lt;BR&gt;
3 ounce canned tuna or cooked fish.&lt;BR&gt;
Using margarine, flour, salt and pepper, skim milk powder and liquid fro can of peas, make a medium white sauce. Heat the sauce and add peas and tuna.  Serve over noodles, rice or toast.&lt;BR&gt;
&lt;BR&gt;
Cheesy Swiss Steak&lt;BR&gt;
2 pounds beef round roast (1-inch thick) &lt;BR&gt;
1/4 cup flour &lt;BR&gt;
1/2 teaspoon salt &lt;BR&gt;
2 chopped carrots &lt;BR&gt;
1/4 cup chopped onion &lt;BR&gt;
1/2 teaspoon Worcestershire sauce &lt;BR&gt;
1 can (8 ounces) tomato sauce &lt;BR&gt;
1/2 cup American cheese, shredded&lt;BR&gt;
&lt;BR&gt;
Cut the beef roast into 4 pieces. &lt;BR&gt;
In a small bowl, mix the flour and salt.&lt;BR&gt;
Dip each piece of meat into the mix of flour and salt. Coat it on all sides with the mix. &lt;BR&gt;
Put the meat in the crock pot. &lt;BR&gt;
Add the chopped carrots and onion.&lt;BR&gt;
Add the Worcestershire sauce and tomato sauce. &lt;BR&gt;
Cover and cook on low for 8-10 hours, OR on high for 4-5 hours. &lt;BR&gt;
Before serving, sprinkle the cheese on top.&lt;BR&gt;
 &lt;BR&gt;
Serving Size: 1/8 of recipe, Yield 8 servings.&lt;BR&gt;
 &lt;BR&gt;
Fruit Muffins&lt;BR&gt;
1 1/4 cups flour &lt;BR&gt;
1/4 cup sugar &lt;BR&gt;
1 teaspoon baking powder &lt;BR&gt;
1/2 teaspoon baking soda &lt;BR&gt;
3/4 cup buttermilk, low-fat &lt;BR&gt;
2 Tablespoons melted margarine &lt;BR&gt;
1 slightly beaten egg &lt;BR&gt;
1/2 teaspoon vanilla extract &lt;BR&gt;
1 cup coarsely chopped frozen strawberries or other fruit, fresh or frozen&lt;BR&gt;
&lt;BR&gt;
Heat oven to 400 degrees. Spray muffin tin with non-stick cooking spray. &lt;BR&gt;
In a large bowl, combine the flour, sugar, baking powder, and baking soda. Stir well until all ingredients are blended.&lt;BR&gt;
In another bowl, combine buttermilk, margarine, egg, and vanilla. Pour this mixture into the dry ingredients &lt;BR&gt;
Using a large spoon, gently stir ingredients just until moist (do not over-mix). Add fruit and stir gently (do not over-mix). &lt;BR&gt;
Spoon batter evenly into 9 muffin cups.&lt;BR&gt;
Bake 20-30 minutes or until golden brown&lt;BR&gt;
Serve hot or cold. &lt;BR&gt;
Serving Size: 1 muffin.   Yield: 9 servings&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S FRENCH DRESSING&lt;BR&gt;
1 teaspoon …………(5 ml)…………sugar&lt;BR&gt;
2 teaspoons………..(10 ml)………..salt&lt;BR&gt;
½ teaspoon………..(2.5 ml)………...pepper&lt;BR&gt;
½ teaspoon ……….(2.5 ml)………...paprika&lt;BR&gt;
1 ½  cup……………(375 ml)……….salad oil&lt;BR&gt;
½ cup………………(125 ml)……….vinegar&lt;BR&gt;
1 clove of garlic (if desired)&lt;BR&gt;
Put sugar, salt, pepper and paprika in jar.  Add oil, vinegar and&lt;BR&gt;
garlic.  Shake well.  When dressing is thoroughly blended, pour&lt;BR&gt;
over salad.&lt;BR&gt;
YIELD:  approximately 2 cups (500 ml)&lt;BR&gt;
CALORIES: 92 per tablespoon (15 ml)&lt;BR&gt;
TIME: 10 minutes.&lt;BR&gt;
&lt;BR&gt;
GRANDMA’S HOMEMADE MAYONNAISE&lt;BR&gt;
1 egg yolk&lt;BR&gt;
½ teaspoon …………(2.5 ml) …………salt&lt;BR&gt;
½ teaspoon…………(2.5 ml)………….dry mustard&lt;BR&gt;
¼ teaspoon ………...(1.25 ml)………...paprika&lt;BR&gt;
dash cayenne&lt;BR&gt;
2 tablespoons ……..(30 ml)……………vinegar&lt;BR&gt;
1 cup ……………….(250 ml)…………..salad oil&lt;BR&gt;
Put egg yolk and seasoning in bowl and mix well.  Add 1 tablespoon&lt;BR&gt;
(15.ml) vinegar and beat well.  Gradually beat in oil until ¼ cup of&lt;BR&gt;
mixture is used.  Then add 1-2 tablespoons (15-30 ml) at a time.  As&lt;BR&gt;
mixture thickens add remaining vinegar.  If oil is added to quickly, &lt;BR&gt;
mayonnaise will curdle.  To fix this add 1 more egg yolk and continue.&lt;BR&gt;
Store mayonnaise in covered jar and refrigerate.&lt;BR&gt;
YIELD: approximately 1 ¼ cup (310 ml).&lt;BR&gt;
CALORIES: 104 per tablespoon (15 ml).&lt;BR&gt;
Time: 15 minutes.&lt;BR&gt;
&lt;BR&gt;
VARIATIONS&lt;BR&gt;
Creamy Mayonnaise&lt;BR&gt;
Whip ½ cup (125 ml) of evaporated milk.&lt;BR&gt;
&lt;BR&gt;
FOOD INFORMATION&lt;BR&gt;
&quot;Power outages can occur at any time of the year and it often takes from a few hours to several days for electricity to be restored to residential areas,&quot; said USDA Under Secretary for Food Safety Dr. Richard Raymond. &quot;Foods stored in freezers and refrigerators can become unsafe in just a few hours if bacteria begin to grow and if these foods are consumed, people can become very sick.&quot; &lt;BR&gt;
&lt;BR&gt;
Steps to follow to prepare for a possible weather emergency: &lt;BR&gt;
Keep an appliance thermometer in the refrigerator and freezer. An appliance thermometer will indicate the temperature in the refrigerator and freezer in case of a power outage and help determine the safety of the food.&lt;BR&gt;
 &lt;BR&gt;
Make sure the freezer is at or below 0° F and the refrigerator is at or below 40° F.&lt;BR&gt;
 &lt;BR&gt;
Freeze containers of water for ice to help keep food cold in the freezer, refrigerator or coolers after the power is out.&lt;BR&gt;
&lt;BR&gt;
Plan ahead and know where dry ice and block ice can be purchased.&lt;BR&gt;
&lt;BR&gt;
FOOD TIPS&lt;BR&gt;
One of the best vegetables you can eat is a sweet potato. They are loaded with vitamin A, carotenoids, vitamin C, potassium and fibre. You can bake and then mix in crushed pineapple for sweetness.&lt;BR&gt;
&lt;BR&gt;
Tomatoes are also packed with vitamin A, fibre.&lt;BR&gt;
&lt;BR&gt;
Wild salmon is great for your health. Salmon that is caught wild has less PCB then farmed salmon. Salmon is high in heart healthy omega-3 fatty acids. Smoking or pickling salmon reduces the amount by about 75%.&lt;BR&gt;
&lt;BR&gt;
Conventionally grown produce is coated with tiny amounts of pesticide residues. Apples, bell peppers, cucumbers, Peaches, pears could be trapped under a layer of wax. &lt;BR&gt;
&lt;BR&gt;
For safety, more so with children and older persons, you should scrub them in a highly diluted solution of liquid dish detergent, which removes most of the pesticides and wax. Or you could peel it, especially apples, peaches, and pears. Organic produce should still be washed to remove other contaminants.&lt;BR&gt;
Beans are inexpensive, low in fat, rich in protein, iron, folic and fibre.&lt;BR&gt;
Bananas contain vitamin B6, vitamin C, and potassium.&lt;BR&gt;
 &lt;BR&gt;
EGGS&lt;BR&gt;
There have been many confirmed Salmonella enteritidis illnesses relating to eggs.  Salmonella can cause fever, abdominal cramps and diarrhoea and usually lasts four to seven days.&lt;BR&gt;
The FDA advised consumers to:&lt;BR&gt;
Toss recalled eggs or return them to the store for a refund.&lt;BR&gt;
See a doctor if you think you are ill after eating recalled eggs.&lt;BR&gt;
Keep eggs refrigerated at all times.&lt;BR&gt;
Throw out cracked or dirty eggs.&lt;BR&gt;
Wash hands, utensils and preparation surfaces with soap and water after contact with raw eggs.&lt;BR&gt;
Cook eggs until both the white and the yolk are firm and eat promptly after cooking.&lt;BR&gt;
Do not keep eggs warm or at room temperature for more than two hours. &lt;BR&gt;
&lt;BR&gt;
Do not eat raw eggs or restaurant dishes made with raw, undercooked or unpasteurized eggs.&lt;BR&gt;
&lt;BR&gt;
Squeaky Clean&lt;BR&gt;
WARNING:  DO NOT MIX BLEACH AND AMMONIA TOGETHER, THE FUMES CAN BE DEADLY.&lt;BR&gt;
&lt;BR&gt;
Germs and kitchen are like a married couple, always close by.&lt;BR&gt;
Germs really love the kitchen, especially sponges, dishcloths and&lt;BR&gt;
sinks. You can disinfect all three by soaking sponges, and&lt;BR&gt;
dishcloths for 5-10 minutes in the sink in a solution of ¾ cup&lt;BR&gt;
Clorox Regular Bleach and one gallon of water.  Rinse with clean&lt;BR&gt;
water and let dry.&lt;BR&gt;
&lt;BR&gt;
You can use the same solution to disinfect food spills, refrigeration, door handles.&lt;BR&gt;
&lt;BR&gt;
Touching surfaces that have germs on them, such as faucets, can&lt;BR&gt;
spread bacteria, cutting boards, tables, phones, light switches,&lt;BR&gt;
anything touched by humans, animals.&lt;BR&gt;
&lt;BR&gt;

1 ounce lemon juice&lt;BR&gt;
2 teaspoons bar sugar &lt;BR&gt;

½ ounce cream soda&lt;BR&gt;
Grated orange peel&lt;BR&gt;
Shake all ingredients except orange peel in electric mixer (or &lt;BR&gt;

Fresh Fruit Punch&lt;BR&gt;
8 ounces apiece of orange juice, pineapple juice, and grapefruit juice.&lt;BR&gt;
1 bottle ginger ale.  Sugar to taste.&lt;BR&gt;
Combine the juices with the sugar.  Stir until the sugar is dissolved and refrigerate.  &lt;BR&gt;
Add the ginger ale plus chunks of ice before serving.&lt;BR&gt;
&lt;BR&gt;
HOT DRINKS FOR CHILDREN&lt;BR&gt;
½ cup cocoa&lt;BR&gt;
1 cup sugar&lt;BR&gt;
2 cups water&lt;BR&gt;
1/8 teaspoon salt&lt;BR&gt;
¼ spoon vanilla.&lt;BR&gt;
Combine cocoa, sugar and salt&lt;BR&gt;
Add water and stir until well blended.&lt;BR&gt;
Cook for 5 minutes. Cool and bottle&lt;BR&gt;
Makes 3 cups syrup&lt;BR&gt;
Add 2 tablespoons of syrup to each cup of scaled milk.&lt;BR&gt;

Vegan: A person that chooses a lifestyle that aims to eliminate the use of products obtained from animals for food, clothing or any other reason. This means that they don't eat any meat, fish, dairy products or eggs. They also avoid products that are tested on animals and do not wear fur, wool or leather.&lt;BR&gt;
&lt;BR&gt;
A vegan's diet includes foods such as: beans, lentils, nuts, seeds, soya products (for protein), whole grains, vegetables, fruits and healthy oils.&lt;BR&gt;
People choose to become vegan for various reasons, the most popular include:&lt;BR&gt;
-Ethical views concerning animal rights&lt;BR&gt;
-Concern for the environment&lt;BR&gt;
-To improve personal health&lt;BR&gt;
-Spiritual or religious beliefs&lt;BR&gt;
&lt;BR&gt;
VEGAN PANCAKES&lt;BR&gt;
Ingredients:&lt;BR&gt;
1 1/2 cups unbleached white flour&lt;BR&gt;
3 tablespoons organic sugar&lt;BR&gt;
1 3/4 teaspoons baking powder&lt;BR&gt;
dash of salt&lt;BR&gt;
3 dashes of nutmeg&lt;BR&gt;
1 to 1 1/4 cups soy milk&lt;BR&gt;
3 tablespoons vegetable oil&lt;BR&gt;
1 Ener-G Egg Replacer (found at health food stores)&lt;BR&gt;
&lt;BR&gt;
Directions:&lt;BR&gt;
Combine all dry ingredients (flour, salt, vegan sugar, baking powder, nutmeg). Combine wet ingredients in a separate bowl. Mix wet and dry ingredients, but don't over-stir. Pour onto hot skillet, flip once. Makes 6 medium pancakes.&lt;BR&gt;
Note: You may also add fresh fruit such as blueberries or vegan chocolate chips for some variety!&lt;BR&gt;
&lt;BR&gt;
Pizza Potatoes&lt;BR&gt;
1/2 cup broccoli, chopped&lt;BR&gt;
1/4 onion, chopped&lt;BR&gt;
1/4 cup carrots, chopped fine&lt;BR&gt;
1 small tomato, sliced&lt;BR&gt;
2 baked potatoes&lt;BR&gt;
1/2 tablespoon margarine&lt;BR&gt;
1/2 tablespoon flour&lt;BR&gt;
1/2 cup skim milk&lt;BR&gt;
1/4 cup cheese, shredded&lt;BR&gt;
Cook broccoli, onions, and carrots in a small amount of water until tender and set aside. In a saucepan, melt margarine and stir in flour. Add milk slowly while stirring. Cook until sauce thickens, stirring occasionally. Add cheese and stir until melted. Add vegetables to cheese sauce and stir. Split open potatoes. Pour equal amounts of vegetable cheese mixture over each potato. Top with sliced tomatoes.&lt;BR&gt;
Serves 2.&lt;BR&gt;
&lt;BR&gt;
GRANDMA'S FRENCH ONION SOUP&lt;BR&gt;
3 tablespoons.....(45 ml).....butter.&lt;BR&gt;
2 cups......... (500 ml)......thin sliced onion.&lt;BR&gt;
4 ½ cups........(1125 ml)......bouillon.&lt;BR&gt;
Salt and pepper to taste.&lt;BR&gt;
Worcestershire sauce to taste.&lt;BR&gt;
2 teaspoons.....(10 ml)......sugar.&lt;BR&gt;
&lt;BR&gt;
FRENCH BREAD&lt;BR&gt;
Parmesan cheese or other finely grated cheese heat butter, add onions, simmer about 10 minutes or until soft and lightly brown. Add bouillon, bring to boil and simmer 20 minutes.&lt;BR&gt;
 &lt;BR&gt;
Season to taste with salt, pepper and Worcestershire sauce. Add sugar. Pour soup into individual soup dishes. On top of each, float a slice of sauted French bread and sprinkle with grated cheese. Put in oven 350 F, (175 C), until cheese is melted.&lt;BR&gt;
YIELD: 6 servings.&lt;BR&gt;
TIME: 60 minutes.&lt;BR&gt;
&lt;BR&gt;
AUNT PAT'S FAVOURITE BUTTER TARTS&lt;BR&gt;
1/3-cup ....(80 ml) ..butter&lt;BR&gt;
1-cup.......(250 ml)..brown sugar&lt;BR&gt;
2 tablespoons.(30 ml).milk or cream&lt;BR&gt;
1/3 cup.……….(80 ml)...currants&lt;BR&gt;
1 egg beaten well&lt;BR&gt;
1 teaspoon..(5 ml)....vanilla&lt;BR&gt;
Mix all ingredients together. Put in unbaked tart shells. &lt;BR&gt;
Bake at 450 F, (230 C), for 8 minutes. Turn down to 350 F, &lt;BR&gt;
(175 C), and cook until brown.&lt;BR&gt;
&lt;BR&gt;
VANILLA PUDDING.&lt;BR&gt;
1 cup, 2 teaspoon ...(280 ml)..pudding mix.&lt;BR&gt;
2 cups................(500 ml)..water.&lt;BR&gt;
2 tablespoons.........(30 ml)...butter or margarine.&lt;BR&gt;
1-teaspoon.......………..(5 ml).....vanilla.&lt;BR&gt;
Combine pudding mix and water in saucepan. Bring to boil, turn stove down and boil gently for 2-3 minutes. Stir constantly. Remove from heat, add margarine and vanilla. Stir. Let stand for 15 minutes, stir again and chill.&lt;BR&gt;
YIELD: 4 servings.&lt;BR&gt;
&lt;BR&gt;
Healthy Eating.&lt;BR&gt;
COOKING INFORMATION&lt;BR&gt;
Food manufactures are permitted to irradiate potatoes and onions to inhibit sprouting; wheat flour to control insects; and ground spices and dehydrated seasonings to reduce microbial content. &lt;BR&gt;
In 2005 The European Civil Society released a statement against irradiation stating, &quot;Food irradiation is often used as a substitute for good sanitary practices and misleads consumers, as it kills spoilage bacteria, which tells people when food is rotten through smell or sight&quot;&lt;BR&gt;
&lt;BR&gt;
&quot;The American and Canadian public is justifiably concerned over the unknown effects of irradiation food.&quot; Rosalie Bertell, PhD.&lt;BR&gt;
Where possible we should buy locally -grown foods. As a rule your food is fresher, better flavour, picked within a day of your purchase. Local produce more likely has a higher nutrient content than store-bought produce that has spent time on a transport truck and warehouse. Further farmers who sell directly to local customers receive the full value for their product, can sell cheaper, as there is less cost to processing, transportation, packing, warehouse etc.&lt;BR&gt;
&lt;BR&gt;
TIPS&lt;BR&gt;
&lt;BR&gt;
An uncovered pan with a rack in the bottom gives the best &lt;BR&gt;
results in roasting. Cooking time varies with preference. &lt;BR&gt;
For rare meat, 16 minutes per pound. &lt;BR&gt;
For medium meat, 22 minutes per pound. &lt;BR&gt;
For well done meat, 30 minutes per pound.&lt;BR&gt;
Add salt during or after cooking, not before. The salt flavour &lt;BR&gt;
does not penetrate more then 1 inch. &lt;BR&gt;
If the meat does not reach the desired colour during roasting, increase the heat to (500 F) &lt;BR&gt;
for a few minutes before removing from the pan.&lt;BR&gt;
Methods of searing is subjecting the meat to a high temperature &lt;BR&gt;
until it is nicely browned. &lt;BR&gt;
&lt;BR&gt;
By Browning in an uncovered pan in a hot oven (450 F-500F). &lt;BR&gt;
By Browning in hot fat in a frying pan on the surface burner. &lt;BR&gt;
By Adding boiling water and cooking at boiling temperature until &lt;BR&gt;
the outside of the meat has lost its red colour.&lt;BR&gt;
&lt;BR&gt;
Reasons For Cooking Meat &lt;BR&gt;
To develop flavour. &lt;BR&gt;
To soften the connective tissue when present in large quantity. &lt;BR&gt;
To kill any living organisms that may be present.&lt;BR&gt;
To make meatballs of even size, spread mixture in an ice cube tray and press the divider down to separate meat into uniform squares. Take out divider and shape squares lightly into balls.&lt;BR&gt;
&lt;BR&gt;
LIGHTSIDE &lt;BR&gt;
A young couple invited an elderly pastor for dinner. While they were &lt;BR&gt;

After the award we met our granddaughter in the hall. I asked her why she hit the kid. She replied, when you and grandma came into the hall the kid turned to me and said, look at those two dinosaurs&quot;.&lt;BR&gt;
&lt;BR&gt;
I mentioned to my doctor, I just can't stop my hands from shaking. He asked, &quot;Do you drink a lot?” My reply was, &quot;No I spill most of it&quot;.&lt;BR&gt;
&lt;BR&gt;
TIPS FOR HOME SAFETY&lt;BR&gt;
Lead Poisoning:&lt;BR&gt;
Banned since 1973, lead-based paint may still be found on children's toys, furniture, particularly on old articles. If not sure strip and repaint any questionable articles.&lt;BR&gt;
Glazed earthenware bowls, plates, mugs, could also be potential source of lead poisoning. Acidic foods, such as citrus juices, soft drinks, and pickled foods, can dissolve the lead in glaze.&lt;BR&gt;
Poisoning:&lt;BR&gt;
Keep poisons locked away or out of reach. Children are not discouraged by bad taste. Keep your local Poison Control Centre's phone number near the phone in case emergency. Buy medicines and household products with child-resistant packaging.&lt;BR&gt;
Remember some plants are also poisonous and should be kept out of reach from children's and pets.&lt;BR&gt;
&lt;BR&gt;
Drowning:&lt;BR&gt;
Never leave a child alone near a body of water, even a puddle. &lt;BR&gt;
Empty wading pools, pails of water that are not being used. &lt;BR&gt;
When on a boat or wharf always put life jackets on children.&lt;BR&gt;
&lt;BR&gt;
PARTY, BAR MIXES&lt;BR&gt;
If you're having a party, provide food with drinks. Offer non-alcoholic substitutes such as fruit, soft drinks.2 drinks taken within an hour by a person 100 pounds produces a 075 reading. One drink is equal to about 1.5 oz. of whisky or 2 bottles of beer. The rate of elimination for each hour after drinking has stopped is 015. A 200-pound person, after 1 drink produces a reading of .019, so you can see there is a big difference due to weight. &lt;BR&gt;
Montreal Gin Sour.&lt;BR&gt;
2 oz. Gin.&lt;BR&gt;
2 teaspoon Lemon juice..&lt;BR&gt;
1 teaspoon Lemon juice.&lt;BR&gt;
1 teaspoon Sugar syrup.&lt;BR&gt;
1 egg white.&lt;BR&gt;
Combine with ice. Shake. Strain and add ice.&lt;BR&gt;
&lt;BR&gt;
Frozen Cider.&lt;BR&gt;
8 oz. Sweet cider.&lt;BR&gt;
4 oz. Orange juice.&lt;BR&gt;
1 teaspoon Applesauce.&lt;BR&gt;
A few drops of lemon juice.&lt;BR&gt;
Combine in blender at a high speed or until thick. Store in the freezer until thick enough to eat with a spoon. &lt;BR&gt;
Best served in tall glasses.&lt;BR&gt;
&lt;BR&gt;
House Standard&lt;BR&gt;
1 jigger Tequila&lt;BR&gt;
2 jiggers Tomato Juice&lt;BR&gt;
2 dashes Tabasco&lt;BR&gt;
Shake with cracked ice and strain.&lt;BR&gt;
Serve with slice of lemon.&lt;BR&gt;
&lt;BR&gt;
NON-ALCOHOLIC DRINK&lt;BR&gt;
Cherry Bing&lt;BR&gt;
1 pint cherry juice&lt;BR&gt;
4 ounces orange juice&lt;BR&gt;
Dilute the cherry juice and orange juice with 10 ounces water; stir to blend.  Add chunks of ice before serving.&lt;BR&gt;
&lt;BR&gt;
